I needed the perfect sauce to top my Walnut Crusted Grilled Tri Tip, so I thought why not incorporate more walnuts, add some fresh arugula and green onions, then throw in some blue cheese… because what is better on a freshly grilled steak, then flavorful blue cheese!
The result was a bold and rich sauce that I’m now kind of obsessed with!
- 2 cups arugula
- 3 cloves garlic (minced)
- ¼ cup walnuts
- ¼ cup blue cheese (crumbled)
- ¼ cup green onions (chopped)
- ½ tsp ground black pepper
- ⅓ cup olive oil
Add all of the ingredients, except the olive oil, into a food processor.
Turn the food processor on then slowly pour the olive oil in through the top of the food processor with the machine still running.
Blend until a creamy sauce forms.
Place on top of a delicious steak or toss with pasta, either way this Arugula Walnut Blue Cheese Pesto is a scrumptious twist on the traditional sauce!
