Last week I hosted a cooking class at Beaming Juice and Superfood Bar in Del Mar.

This place is all about raw, vegan and gluten free healthy eating, so I created a couple of new and delicious recipes to match their mission.

Almond Date Protein Bites

First I prepared these scrumptious No Bake Protein Bites, followed by a Banana Date Protein Shake and a Superfood Pumpkin Smoothie.

Protein Bites Ingredients

No Bake Protein Bites Ingredients

  • 1 cup pitted dates (chopped)
  • 1 cup almonds
  • 1/2 cup peanut butter (or almond butter)
  • 1 tsp vanilla extract
  • 2 cups sprouted buckwheat groats
  • 1/4 cup honey
  • 1/4 cup shredded coconut
  • 1/4 cup protein powder

No Bake Protein Bites Instructions

Place all ingredients in a food processor.

No Bake Protein Bite Recipe

Blend until ingredients are combined and a sticky ball forms.

No Bake Protein Bite Recipe

Press onto wax paper and roll into 1/2 inch thick sheet.

No Bake Protein Bar Recipe

Use a one inch diameter pastry cutter to cut into bite size pieces.

Easy Homemade No Bake Protein Bites

Chill in the fridge for up to one week. Great for breakfast, a mid-day snack or a post workout protein kick!

The sprouted buckwheat grouts keep this recipe gluten free and provide eight essential amino acids, as well as high proportions of manganese and magnesium.

The dates add a natural sweetness and the almonds give a boost of riboflavin and L-carnitine, nutrients that boost brain activity and may also reduce the risk of Alzheimer’s disease.
