Now let’s get to my first recipe cooking with Wonderbag! This recipe for Kale Turkey Soup is the first of many that you will see me post using the Wonderbag. It’s simple, healthy and full of flavor!
- 1 tsp olive oil
- 1 white onion (chopped)
- 4 cloves garlic (minced)
- 1 lb lean ground turkey
- 15 oz can cannellini beans
- 4 cups (24 oz) chicken broth
- 3 cups kale (chopped)
- 1 tsp dried oregano
- 1 tsp fennel seeds (ground with mortar and pestle)
- ½ tsp salt
- 1 tsp black pepper
- 2 tbsp parmesan cheese (for topping)
Heat the olive oil in a large pot over medium heat. Add the onion and cook for 3-4 minutes. Add the garlic and cook for 1-2 minutes.
Add the ground turkey.
Cook through then add the beans and chicken broth.
Add the kale.
Cook for 5-7 minutes.
Once the kale begins to wilt, add the oregano, fennel, salt and pepper.
Bring to a simmer, cover and place in the Wonderbag.
Cover the Wonderbag , close tightly and allow to continue slow cooking for 4-6 hours.
Seriously, it just sat on my kitchen table for almost 6 hours, I opened it up and voila, STEAM! Yes, the soup was still steaming! I was so excited!
I grated some fresh parmesan cheese on top and served the soup with a warm, crusty baguette for dipping!
I’m totally addicted to this soup AND the Wonderbag! I’ll be “bagging” this healthy soup up to take to parties and potlucks all winter long!
