Honey Bunches of Oats Crispy Chicken Strips

Hands down my favorite cereal of all time, Honey Bunches of Oats, slightly sweet, crunchy and so delicious! As I ate a bowl for breakfast last week, I got to thinking, what if I finely crush the cereal and coat it on chicken for a slightly sweet, super crispy chicken strip.

The next day I got an e-mail from my friends at Pollinate Media Group to partner up with Walgreens and Post Cereal to create a recipe using a delicious Post Cereal, such as Honey Bunches of Oats.

The timing could not have been more perfect! I rushed over to my local Walgreens and picked up a box of cereal. By the way, any Post Cereal is only $1.99 this week (November 24-30) at Walgreens… SCORE!

Honey Bunches of Oats Crusted Chicken Strips Ingredients

Ingredients

  • 4 cup Honey Bunches of Oats
  • 4 chicken breasts
  • 3 cups milk
  • ½ tsp salt
  • ½ tsp pepper
  • 2 cups flour
  • 6 eggs

Preheat the oven to 375°.

Place the Honey Bunches of Oats in a food processor. Blend to a fine crumb consistency.

Slice the chicken breasts into strips.

Pour the milk, salt and pepper in a large bowl. Add the chicken strips.

Whisk the eggs in a small shallow bowl.  Place the flour in another shallow bowl or on a rimmed plate. Pour the Honey Bunches of Oats crumbs into a shallow bowl or rimmed plate.

The chicken breading station is now all set up.

Begin breading the chicken by removing it from the milk, letting any excess milk drip off, then rolling it in the flour.

Remove from the flour and coat the chicken in the eggs, then roll in the Honey Bunches of Oats crumbs.

One great trick I’ve learned when breading anything is to use one hand for the wet ingredients and another hand for the dry ingredients. It helps keep things a little cleaner and prevents the dry ingredients from clumping.  Just a little tip 🙂

Once all of the chicken is breaded, place on an aluminum rack on a baking sheet. This allows the chicken to get nice and crispy on all sides!

Bake for 30 minutes.

I served these with a Honey Dijon dipping sauce, perfect with the Honey Bunches of Oats crust on the chicken!
