Drunken Noodles



Confession: I am completely addicted to Rama Thai’s Drunken Noodles. Like, it’s kind of a problem. I have serious cravings for these noodles on a regular basis! I’ve had Drunken Noodles elsewhere and enjoyed the dish, but never like at Rama! Now it’s my turn to attempt the re-creation of their spicy noodle dish!

Drunken Noodles with Chicken

I will preface this recipe by telling you that a trip to the Asian market is necessary to make this dish at home, I will also tell you that it is absolutely worth the trip!

If you haven’t been to an Asian market before, you’re going to fall in love! Great, unique products and produce at great prices!

For everything I couldn’t find at my local grocery store I headed over to 99 Ranch Market, a large Asian supermarket chain located in California, Texas, Washington and Nevada. If you’re not in one of those states, simply google search “Asian Market” to find something similar near you.

Drunken Noodles Ingredients

Ingredients

  • 1 tbsp olive oil
  • 6 cloves garlic (minced)
  • 2 red thai chilies (minced)
  • ¼ cup onion (thinly sliced)
  • 1 lb chicken (thinly sliced)
  • 1 tbsp oyster sauce
  • ¼ cup fish sauce
  • 1 tsp red chili paste
  • ¼ cup soy sauce
  • ½ tsp sugar
  • 1 bunch chinese broccoli (chopped)
  • 1 tomato (diced)
  • 8 oz wide rice noodles
  • ¼ cup thai basil

In a large wok or skillet, heat the olive oil over medium-high heat. Add the garlic, red chilies and onion. Stir fry 1-2 minutes.

Add the chicken. Stir fry 4-5 minutes.

Whisk the oyster sauce, fish sauce, chili paste, soy sauce and sugar together.

Pour the sauce over the dish and cook 4-5 minutes.

Boil a large pot of water and cook the noodles 2-3 minutes.

Add the tomatoes and chinese broccoli to the wok.

Toss to coat and cook 2-3 minutes. Add the thai basil.

Drain the noodles and add them to the wok.

Toss together and serve immediately.

Voila! One wok, 20 minutes and a delicious Thai dish is served in less time than you could pick up the phone and order take out!

Thai Drunken Noodles

♣ Vegetarian Option: For Vegetarian Drunken Noodles, add 1 lb. of additional veggies such as eggplant, carrots or snow peas at the time you add the garlic, onion and chili pepper, add the sauce and sauté for 3-5 minutes.

♦ Gluten Free Option: Make sure that the soy, oyster and fish sauces are gluten free. All those pictured above are.
