It’s National Chocolate Chip Cookie Day, yay!
Basically any day that is solely dedicated to a delicious dessert, I’m on board with!
I partnered up with The Cravory to create a chocolate chip cookie recipe utilizing their ultimate chocolate chip cookies. If you’re not familiar with The Cravory, let me fill you in!
The Cravory is “The Ultimate Cookie Experience” combining traditional cookie varieties with unique monthly flavors. Oh hello Maple Bacon, Birthday Cake and Lemon Bar Cookies. Yes, I have tried all of these and yes, they are all amazing!
While they do have a store now open in San Diego, they began as a cookie delivery operation, which means you can have them shipped anywhere in the US! You can also sign up for “Cookie of the Month” subscriptions (now you’re speaking my language!)
Since we’ve had a crazy heat wave going on this week in San Diego, I decided to fill the scrumptious cookies with a cool, creamy peanut butter cheesecake filling, then freeze the cookie sandwich for the ultimate refreshing treat!
- 8 oz cream cheese
- ½ cup creamy peanut butter
- ¼ cup powdered sugar
- 1 tbsp milk
- 12 Cravory Chocolate Chip Cookies
Combine the first four ingredients in a large bowl with an electric hand mixer.
Spread the cheesecake mixture onto 6 of the cookies.
Sandwich the other 6 cookies on top.
Wrap in plastic wrap and place in the freezer for at least 30 minutes.
Unwrap and enjoy!
