Is it just me or do you think of popcorn balls and Halloween hand-in-hand? It’s kind of like stuffing and Thanksgiving. Why do we not eat popcorn balls and stuffing year-round? I mean, they’re both really super delicious! I think I’m going to start the year-round stuffing and popcorn ball trend, who’s coming with me? 😉
Any who, while thinking of new fall recipes, including ideas for fall holidays, like Halloween, I came up with my own little twist on the delicious popcorn ball!
It’s not very often that my Mom requests a new recipe from me. You see, she’s kind of a picky eater (and I’m being really generous with the words kind of, haha!)

Man oh man, the last week of my life has been completely crazy! I got called up to LA by my manager at CMEG to meet with a major network about hosting a new show! I know, right? So freaking awesome!
I took a whirlwind 24 hour trip to LA, met with the network and took the opportunity while I was in town to see some friends. I headed back home to San Diego on Friday morning and back to work.
I did a little work over the weekend and watched some football then woke up this morning and headed to my former college, SDSU, to guest lecture in JMS210: Social Media in Journalism. A class that just started it’s third year on campus. It’s amazing that this is now a college course!
One very fond memory I have of growing up in Oklahoma during the fall was the party mix my Dad used to make. He would make it on the weekends to eat while watching football games.
It slow baked in the oven and the house smelled amazing, he would lay it out to cool and I would sneak my teeny little hands up on the counter to grab a bite 😉
One of my go-to quick & easy weeknight meals is some sort of Asian rice or noodle dish, such as this Quinoa Fried Rice or Gluten Free Kung Pow Beef & Noodle Bowl . They can be tossed together in just a few minutes and are always delicious!
When it comes to getting a little older day by day, working a little harder day by day and sleeping a little less day by day, I need a little help when it comes to keeping my skin looking young, fresh and wrinkle-free (and I’m pretty sure I’m not alone on this!)
On a recent visit to see my beautiful, talented and super sweet esthetician, Elizabeth Rabena, I asked her about things I could do to improve those annoying circles under my eyes… seriously it’s like one day I woke up and was no longer 22, how did that happen? LoL!
She recommended incorporating more turmeric in my diet to help with the dark circles.

My beloved Oklahoma Sooners took the field for their first game of the season on Saturday and put up an impressive 48 points against Louisiana Tech, and in less than a week my San Diego Chargers will take the field against Arizona for their first regular season game.
