Hello Taco Tuesday!  What a fabulous weekend I had! One of my best friends came to visit spur-of-the-moment from Arizona and we spent the entire weekend watching football and eating. I mean, does it get any better than that?

Oh yes it does, it gets much better when both of your teams win over their biggest rivals! My Sooners defeated Texas on Saturday… and we celebrated!  My Chargers defeated the Raiders on Sunday… and we celebrated some more!

Since the Chargers vs Raiders game is one of the biggest of the season, I decided to invite about 20 of my fellow San Diego fans over and throw a little football watch party!

And let’s be real, there’s nothing better than digging into a really great dip while watching football!

Enter, the Cheesy Baked Taco Dip, AKA, really great dip!

Cheesy Baked Turkey Taco Dip

I took the idea of the classic 7 Layer Dip, then kicked it up a notch!

Gluten Free Baked Taco Dip

While cold dips can be great, there’s really nothing like the taste of a warm, cheesy dip coming out of the oven and straight onto a chip!

For example, Buffalo Chicken Dip, Chipotle Pulled Pork Dip, this dip!

Baked Turkey Taco Dip

While I knew I had a winner on my hands the minute I tried this dip, it wasn’t until my friends arrived at the party and tried the dip that I realized I had created the Superbowl winner of all dips!

I made three skillets of the dip, and before I could get the next one in the oven, the one before it was already gone! Definitely the biggest hit of the party and something I know I’ll be getting requests for on the regular now!

Cheesy Baked Taco Dip Ingredients

Ingredients

  • 1 tsp olive oil
  • ½ cup onions (diced)
  • 2 cloves garlic (minced)
  • 1 lb ground turkey (or beef)
  • 2 tbsp taco seasoning (click link for homemade recipe)
  • 1 jar (16 oz) salsa
  • 1 can (15 oz) black beans (drained & rinsed)
  • 16 oz cream cheese
  • 4 oz can diced green chilies
  • 2 cups spicy cheddar (or monterey jack) cheese (shredded)
  • 1 cup guacamole
  • 2 tbsp green onions (diced)
  • ½ cup tomatoes (diced)

Preheat the oven to 400°.

Heat the olive oil in a large skillet over medium heat. Add the onions, saute 3-4 minutes, then add the garlic & saute an additional 1-2 minutes. Add the turkey and cook through.

Once the turkey is cooked through, add the taco seasoning, salsa & black beans.

Reduce heat to low and simmer 5-10 minutes.

In the meantime, combine the cream cheese and green chilies in a small bowl.  Spread in the bottom of an oven-safe baking dish.

Top with the ground turkey mixture.

Top with the shredded cheddar cheese.

Place in the oven for 20-25 minutes.

Remove from the oven and top with the guacamole, green onions & tomatoes.

Ahhhhh, do you hear that? It’s the cheese gods shining down in this amazing dip!

Se-r-i-ous-ly, it’s so good!!!!

The other great thing about this dip is that it’s gluten free and can easily be made ahead of time, like I did for the party.

Simply cover the dip, place it in the refrigerator, and bake it just before guests arrive.

I promise, they’ll be very happy guests!

Now here’s the best question, who’s running home to make this dip tonight for Taco Tuesday? I don’t blame you one bit, it’s totally tasty!

You can serve it with tortilla chips or just eat it straight from the skillet with a spoon… I mean that wouldn’t be totally inappropriate, would it?  😉
