Buffalo Chicken Chili

With fall in full swing and crock pots full of deliciousness on my mind, I decided to re-create one of the most popular recipes from my cookbook, Buffalo Turkey Chili.

Gluten Free Buffalo Chicken Chili

I made this dish on San Diego 6 News last Fall and everyone in the studio was a huge fan! Now I’ve switched the recipe up with ground chicken, instead of turkey and threw in a few more spices for a little bit more heat & flavor!

Crock Pot Buffalo Chicken Chili

Think of this recipe as chili’s ode to the chicken wing! All the delicious flavors of a chicken wing in a healthy chicken chili recipe!

Buffalo Chicken Chili Recipe

Serve it up with a side of Buffalo Cheddar Biscuits (← recipe in my cookbook!) and you have a totally delicious, slightly spicy, festive fall-inspired dinner!

Buffalo Chicken Chili Ingredients

Ingredients

  • 1 tbsp olive oil
  • 1 cup red onion (chopped)
  • 1 jalapeño (de-seeded & diced)
  • 2 cloves garlic (minced)
  • 1 cup carrots (shredded)
  • 1 cup celery (chopped)
  • 2 lb ground chicken breast
  • ½ cup buffalo sauce
  • 1 can (15 oz.) tomato sauce
  • 1 can (15 oz.) cannellini beans
  • 1 can (10 oz.) crushed tomatoes with green chilies
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp cayenne pepper
  • ½ tsp red pepper flakes
  • ½ tsp black pepper
  • ½ tsp kosher salt

Add the olive oil to a large skillet over medium heat. Once the oil is warm, add the onion, jalapeño, garlic, carrots and celery.

Saute 5-7 minutes, then add the ground chicken and cook through.

In the meantime add the buffalo sauce, tomato sauce, cannellini beans and diced tomatoes with green chilies to a crockpot set to low.

Add the ground chicken mixture to the crock pot, then add the chili powder, cumin, paprika, cayenne pepper, red pepper flakes, black pepper and kosher salt.

Mix everything together, then cook on low for 6-8 hours, or crank up to high and cook for 3-4 hours.

Serve it up with a little freshly grated cheddar cheese on top and dig in!

I could seriously eat this chili all day, every day! It’s got just the right amount of flavor and spice, and the lean, ground chicken breast keeps it on the healthier side of chili, perfect for going back for seconds 😉

Ingredients
