I’m pretty sure that I’ve decided 2015 is going to be “The Year Of One Pot Dishes” on LLB!
I’ve been totally obsessed with creating one pot recipes over the last couple of months, they’re quick, easy and have the obvious appeal of only one dish to wash after the meal!
After picking up a package of potato gnocchi on a shopping trip to World Market last week, I decided to add my favorite classic baked potato toppings to the gnocchi to make my latest one pot dish!
Tender gnocchi cooked in a cheesy sauce, topped with crispy bacon and fresh chives, pure goodness made in only 20 minutes!
- 6 slices bacon (chopped)
- 1 cup chicken broth
- 16 oz potato gnocchi
- ½ tsp black pepper
- 4 tbsp sour cream
- 1 cup cheddar cheese (shredded)
- 2 tbsp fresh chives (chopped)
Add the chopped bacon to a large pan over medium-high heat, cook for 8-10 minutes, or until crisp.
Remove from the pan and place on a paper towel to drain off the grease.
Pour all grease out of the pan and wipe clean. Place the pan back onto the stove and add the chicken broth.
Bring the broth to a simmer, then add the gnocchi, stir, cover, reduce heat to medium and cook for 5 minutes, or until the gnocchi is tender.
Uncover, then add the black pepper, sour cream and cheese. Stir until the cheese is melted in, then add the chopped bacon, stir to combine, remove from the heat and top with the fresh chives.
A simple dinner, perfect for weeknights!
♣ Vegetarian Option: Omit the bacon to make this recipe vegetarian.
♦ Gluten Free Option: Purchase or make homemade gluten-free gnocchi to make a gluten-free version of this dish. Always make sure the broth used is gluten free.
