Maple Candied Bacon Bread Pudding Muffins

If you’re a fan of bread pudding and candied bacon, you’re going to love these muffins! They’re perfect for grabbing on-the-go or serving at brunch.

Maple Candied Bacon Bread Pudding Muffins Ingredients

Ingredients you’ll need

  • Bacon
  • Maple syrup
  • Eggs
  • Milk
  • Vanilla extract
  • Ground cinnamon
  • Hawaiian rolls

Step by step instructions

Preheat the oven to 400°F.

Place the bacon on a baking rack on top of a foil-lined baking sheet, drizzle ¼ cup of maple syrup across the slices of bacon.

Place in the oven to cook for 12 minutes. Remove from the oven, flip the bacon and drizzle another ¼ cup of maple syrup across the slices of bacon. Place back into the oven to cook for another 12 minutes.

Remove the bacon from the oven, place on a cutting board and set aside. Turn the heat on the oven down to 375°F.

In a large bowl, whisk the eggs, milk, vanilla, cinnamon and remaining ¼ cup maple syrup together. Add the quartered Hawaiian rolls and toss to coat.

Chop the bacon.

Add ¾ of the bacon to the bread pudding and toss to combine.

Place the bread pudding in silicone or paper muffin liners in a muffin tin.
