One of my favorite meals of the day has always been brunch!
Last week I decided to combine two of my breakfast/brunch favorites, cereal and waffles, into a delicious new recipe!
Not only is this a fun twist on breakfast, this recipe is also gluten free!
I combined a yummy gluten free banana peanut butter waffle batter with Envirokidz Gluten Free Peanut Butter Panda Puffs Cereal for a little crunch in every bite of waffle!
- 1 ½ cups gluten free flour
- 1 tbsp granulated sugar
- 2 tsp baking powder
- ½ tsp salt
- ½ tsp ground cinnamon
- 2 large eggs
- 1 ¼ cup soy milk
- 2 tbsp honey
- 1 tbsp unsalted butter (melted)
- 1 banana (mashed)
- ¼ cup peanut butter
- ½ cup Nature’s Path Envirokidz Peanut Butter Panda Puffs Cereal
Combine the flour, sugar, baking powder, salt and cinnamon in a medium mixing bowl.
In a large mixing bowl combine the eggs, milk and honey.
Add the melted butter.
Add the mashed banana and peanut butter.
Whisk together, then add the flour mixture.
Combine well, then add the peanut butter puffs cereal.
Mix well, then spoon the mixture into a waffle iron and cook.
Feel free to top with a little butter, honey, syrup or extra cereal for an additional crunch!
Why I hadn’t thought of putting cereal in waffles before is totally beyond me!!
