Alright guys, it’s confession time, I might be a tad bit obsessed with mac and cheese 😉
Whether it’s Buffalo Chicken Mac and Cheese, Butternut Squash Mac and Cheese, BBQ Chicken Mac and Cheese, or this new Bratwurst Beer Mac and Cheese, I just can’t get enough of the creamy, cheesy, pasta goodness!
A couple of weeks ago I realized that I don’t have many recipes on the blog that include beer. I found this to be quite the travesty since I live in one of the craft beer capitals of the world and just so happen to love beer myself!
I decided to put an end to that travesty very quickly by adding beer to mac and cheese, because what could be better?! Well, if you also add grilled bratwurst, that would probably be better, so I did that 😉
It’s rich, hearty, creamy and flavorful, everything you’d want and expect from a Bratwurst Beer Mac and Cheese Recipe!
- 2 cups uncooked macaroni noodles
- 1 lb bratwurst
- 8 oz cream cheese (cubed)
- ½ cup amber beer
- ½ cup milk
- 1 tsp garlic powder
- ½ tsp chili powder
- ½ tsp black pepper
- ½ tsp kosher salt
- 2 cups cheddar cheese (shredded)
Grill the bratwurst, 12-15 minutes, or until fully cooked, then set aside.
Boil a large pot of water and cook the macaroni noodles according to package directions. Drain the noodles, then return them to the pot.
Add the cream cheese, amber beer, milk, garlic powder, black pepper and kosher salt.
Stir continuously as the cheese melts.
Once the sauce is creamy, add the cheddar cheese.
Stir continuously until the cheese is melted into the dish.
Slice the grilled bratwurst and add it to the dish.
You could cook the bratwurst with another method besides grilling, but I really love the flavor that grilling the bratwurst adds to this recipe!
I sliced up 4 of the 5 grilled bratwurst and added them to the mac and cheese, then of course proceeded to eat the additional bratwurst for lunch 😉
I used a local San Diego amber beer, Coronado Red, which is one of my favorites, but if you can’t find it in your area, another amber beer will work just fine!
This recipe is easily made in 30 minutes, making it the perfect weeknight dinner for any mac and cheese, beer and bratwurst lover!
