This peanut sauce is everything!!!

It’s deliciously creamy, sweet with a little bit of spice, and seriously scrumptious in tons of different recipes!

Thai Peanut Chicken Stir Fry Recipe

I originally made the sauce back in April 2012 as part of a recipe for PB&J Chicken Skewers. Since then, I’ve added it to Thai Peanut Pulled Pork Roti Bread Pizzas, Thai Peanut Vegetable Pasta and Thai Peanut Chicken Pot Stickers.

Today, I’m adding it to a quick and easy stir fry recipe that’s perfect for weeknight dinners in a rush!

Thai Peanut Chicken Stir Fry Recipe

The sauce is so easy to make. Literally toss everything in a blender or food processor and it’s ready to go! Use a cup of the sauce for this stir fry, then try out other recipes featuring the sauce for multiple meals throughout the week!

Thai Peanut Chicken Stir Fry Ingredients

Ingredients

  • 1 tbsp olive oil
  • ½ cup onion (thinly sliced)
  • 3 cloves garlic (minced)
  • 1 tsp fresh ginger (minced)
  • 1 lb boneless, skinless chicken breast (thinly sliced)
  • 4 oz rice noodles
  • 1 cup Thai peanut sauce (recipe below)
  • 1 tbsp fresh cilantro (chopped)
  • 1 tbsp peanuts (chopped)

Thai Peanut Sauce (makes 3 cups)

  • 1 ½ cups coconut milk
  • 1 cup creamy peanut butter
  • ¼ cup Thai red curry paste
  • 2 tbsp apple cider vinegar
  • 2 tbsp soy sauce
  • ¼ cup brown sugar
  • 1 tbsp fresh lime juice

Add all of the Thai peanut sauce ingredients to a blender or food processor, blend until smooth and creamy, then set aside.

Bring a large pot of water to boil on the stove.

While waiting for the water to boil, heat the olive oil in a large skillet or wok over medium high heat.

Add the onion, saute 3-4 minutes, then add the garlic and ginger, saute for an additional 1-2 minutes, then add the chicken.

Saute until the chicken is cooked through, 4-5 minutes.

While the chicken is cooking, add the rice noodles to the boiling water, cook 4-5 minutes, drain, rinse in cold water, then add to the chicken with 1 cup of peanut sauce.

Mix everything together, saute for an additional 2-3 minutes. Transfer to a bowl and top with chopped cilantro and peanuts.
