I simply can’t get enough of the current “bowl trend”, for me it’s a fun and delicious way to eat healthier without just eating a salad every day!

But of course, I do have to admit that this recipe was inspired by A SALAD (ironic, I know!) at one of my favorite San Diego restaurants, Coffee Cup. Their Chino Citrus Salad is a combination of mixed greens topped with orange slices, carrots, bean sprouts, cilantro, grilled chicken and their delicious homemade dressing.

After eating it for lunch last week, I decided to come home and recreate the salad as a bowl!

I feel like this pasta recipe is my Mona Lisa, the dish that took me three months to perfect, but now it’s a masterpiece!

I tried spaghetti noodles, penne pasta and pasta shells, I used various amounts of hot sauce, chicken broth and spices, I used diced chicken, sliced chicken and ground chicken, but I did not give up until the perfect One Pot Chicken Fajita Pasta was created, and now here it is, in all it’s glory!

Easter is just a couple of weeks away and as I thought about new recipes for the holiday, all I kept thinking about was making a spring version of my very popular Butternut Squash Bruschetta Recipe!

That bruschetta appetizer is a HUGE HIT around the fall holidays, so I knew I had to make a spring version for Easer. I decided to roast up beets instead of butternut squash, and toss in fresh basil instead of sage, instead of ricotta, I used goat cheese (because I love the way it pairs with beets!) but I kept the most important piece of the bruschetta in tact, the almighty balsamic reduction drizzle at the end that adds a touch of sweetness and a beautiful final presentation!
