Last week as I was preparing the Blue Cheese Buffalo Chicken & Pork Meatloaf for dinner, I thought, what goes better with meatloaf than mashed potatoes? So, then I thought, I must make a Buffalo Cheesy Mashed Potato Recipe to go with the meatloaf, and here we are!
Blue cheese dressing adds a nice creaminess to the potatoes, while the buffalo sauce gives them a nice little kick!
An easy and delicious side dish that you just can’t beat!
- 3 lbs russet potatoes (peeled & cubed)
- ½ cup butter (cubed)
- ½ cup milk
- ½ cup blue cheese dressing
- ½ cup buffalo sauce
- 1 cup blue cheese crumbles
Preheat the oven to 375°.
Add the potatoes to a large pot of boiling water.
Boil until fork tender, 15-20 minutes. Drain and place back on the stove over low heat.
Add the butter, milk, blue cheese dressing and buffalo sauce. Use an electric hand mixer to mash the potatoes.
Place the potatoes in an oven safe dish and sprinkle with the blue cheese crumbles. Place in the oven for 10 minutes.
Cheesy, creamy, mashed potato deliciousness is served!
If you’re a lover of mashed potatoes, you have to try this new twist on the classic side dish!
