For today’s recipe I’m combining one of my favorite summer salads, the caprese, with the deliciousness of a grilled chicken sandwich!
I partnered up with my friends at King’s Hawaiian to serve this sandwich up on their perfectly sweet hamburger buns!
The flavor combination was so scrumptious and while these chicken sandwiches look fancy, they’re easily tossed together in only 30 minutes!
- 4 chicken breasts
- 1 cup basil pesto – divided (click link for homemade recipe)
- 8 slices fresh mozzarella cheese
- 2 tomatoes (cut into 8 slices)
- 4 King’s Hawaiian Hamburger Buns
- 8 large fresh basil leaves
Start by tossing the chicken breasts in ½ cup basil pesto. Heat the grill to medium. Place the chicken on the grill. Grill for 10-12 minutes per side.
Place the heirloom tomatoes and hamburger buns on the grill.
Grill the tomatoes for 2 minutes per side, then place 2 slices of tomato on top of each chicken breast. Add two slices of cheese on top of the tomatoes on each chicken breast and allow to melt over the chicken.
Once the cheese is melted, about 3-4 minutes later, remove everything from the grill.
Place the chicken breasts on the bottom buns, place two fresh basil leaves on top of the cheese on each sandwich. Spread the remaining ½ cup basil pesto across the top hamburger buns, sandwich together and dig in!
This sandwich has so many light, fresh flavors going on, it’s perfect for summer grilling!
