I love this recipe because it’s the perfect balance of sweet and spicy! Cinnamon and maple give the salmon a nice sweetness where the chili powder and chipotle powder give it a little kick of spice!
I baked the salmon with small diced sweet potatoes which roast up perfectly in the same time as the salmon for a delicious, complete meal!
- ¼ cup maple syrup
- 1 tsp chili powder
- 1 tsp chipotle powder
- ½ tsp ground cinnamon
- ¼ tsp kosher salt
- 1 lb salmon
- 1-2 lbs sweet potatoes (peeled & small dice) – optional
Preheat the oven to 400°F.
In a small bowl, combine the maple syrup, chili powder, chipotle powder, ground cinnamon and kosher salt.
Place the salmon in a foil basket on a baking sheet, cover with the chipotle cinnamon maple glaze.
Optionally add sweet potatoes around the salmon and drizzle with any additional chipotle cinnamon maple glaze.
Place in the oven for 20-25 minutes.
Serve with the roasted sweet potatoes or roast other vegetables with the salmon. You can also serve the salmon over rice or quinoa.
Keeping the sides simple is key to making this easy maple chipotle salmon recipe a weeknight meal in minutes!
