Trick or treat! It’s Halloween and I’m sharing a delicious new treat recipe with you! And don’t worry, it doesn’t take any crazy tricks to make these scrumptious little muffins!

Cranberry Mojito Muffin Recipe

I’m also very excited to share my first recipe using Your Inspiration At Home products! YIAH is an Australian based company that has recently come to America. I was lucky enough to partner up with Roberta Gallagher, a fabulous YIAH consultant that is as excited as me to introduce all of their amazing spices, sugars, rubs and vinegars to the US!

Mojito Muffins

In this recipe I used their Mojito Sugar to turn a traditional Cranberry Muffin into a sweet and tart unique breakfast treat that is sure to be a hit with friends, family, co-workers, or in my case, the lovely people who work at the front desk of my building 🙂

Cranberry Mojito Muffin Ingredients

Ingredients

  • 3 cups flour
  • 2 tbsp baking powder
  • ½ tsp salt
  • ½ cup butter (softened)
  • ½ cup sugar
  • ¼ cup YIAH Mojito Sugar
  • 1 cup coconut milk
  • 2 eggs
  • 1 cup dried cranberries
  • 1 tsp lime zest

Preheat the oven to 350°.

In a small bowl combine the flour, baking powder and salt.

In a large bowl combine the butter and sugars.

Using an electric hand mixer, combine the butter and sugars. Add the coconut milk and egg, combine well. Add the flour mixture.

Once the batter is well mixed, hand mix in the cranberries and lime zest.

Mix together then spoon the muffin batter into lined muffin tins. Bake for 25-30 minutes.
