I love baked brie! I mean, who doesn’t? It’s melty, creamy, cheesy goodness, generally surrounded by sweet friends, like fruit and jam!

Every year around the holidays, people go crazy for this Baked Brie Bread Bowl with Caramelized Pears and this Salted Caramel Pecan Baked Brie. Both are really solid options for serving at parties and guaranteed to be a crowd pleaser!

Now if you’re looking for something a little less messy and easier to tray pass, these Baked Brie Puff Pastry Bites are where it’s at! All the goodness of brie en croute, (the fancy French term for baked brie wrapped in puff pastry) but in simple bite-sized portions!

I topped these baked brie puff pastry bites with fig jam, but any kind of preserves will work. You can mix up this recipe based on the season. Try strawberry jam on top in the summer and cranberry relish in the winter!

Want to get crazy? Try bacon jam on top! I’ve done it and it’s amazing! To really mix things up, try topping them with a variety of jams, so you and your guests can try different variations of the puff pastry bites!

The best part of this recipe is that no matter how you top them, these puff pastry bites are SO EASY to make and always require only 3 ingredients!

Instructions

  • Prepare the puff pastry dough. 
    • Before you start the recipe, make sure to defrost the puff pastry dough. To do this, remove the puff pastry dough from all packaging. Place the sheets on a cutting board to defrost at room temperature for 30 – 40 minutes.
    • Once thawed, slice each sheet of puff pastry dough into 12 squares.
    • Place each square of puff pastry dough into a mini muffin tin.
    • Use a fork to pierce the puff pastry dough bites 3-4 times. This will reduce the amount of “puffing up” in the oven.
  • Bake the puff pastry bites.
    • Preheat oven to 375°F.
    • Place the puff pastry bites in the oven for 12 minutes.
    • Remove from the oven and press down in the middle of each square of puff pastry dough.
    • Place a piece of brie cheese in the middle.
    • Add a teaspoon of fig butter (or your favorite jam, jelly or preserve) on top.
    • Place back into the oven for 5-7 minutes. Remove when the puff pastry dough is golden brown and the brie has melted inside.

  • Do you remove the rind from brie before baking? You do not need to remove the rind from brie before baking. It’s totally edible and adds texture and flavor to the cheese. If you prefer brie without the rind, you can also remove it before adding the brie to the puff pastry bites.
  • Can I reheat these puff pastry bites? Yes. To reheat the puff pastry bites, place them back in the oven on a baking sheet. Bake at 200°F for 15 – 20 minutes to bring back the crispiness of the puff pasty and re-melt the brie cheese.
  • How long does baked brie in puff pastry last? These little puff pastry bites will last in a sealed storage bag or container in the refrigerator for up to 5 days. They can be reheated or eaten cold.

  • 2 sheets puff pastry dough, 17.25 oz box – defrosted
  • ½ cup brie cheese
  • ½ cup fig butter , or fig jam (see note below)

Instructions

  • Preheat the oven to 375°F.
  • Slice each puff pastry sheet into 12 squares.
  • Place each square of puff pastry dough into a mini muffin tin.
  • Place in the oven and bake for 12 minutes.
  • Remove from the oven and press down in the middle of each square of puff pastry dough.
  • Place a teaspoon of brie cheese in the middle.
  • Add a teaspoon of fig butter to each puff pasty bite.

  • Jam variations: any flavor of jam, jelly or preserve can be used in place of the fig jam.
