In continuation with “Thanksgiving Leftover Week” on the blog, I’m sharing a new pizza recipe that might seem a little strange at first, but don’t knock it until you’ve tried it!

One of my favorite pizzerias downtown San Diego, Basic, introduced me to mashed potato and bacon pizza almost 10 years ago and I’ve been hooked ever since!

Pizza: good, mashed potatoes: good, bacon: good, cheese: good, the combination: GREAT!

Mashed Potato and Bacon Mini PIzzas

I’ve been wanting to re-create this mashed potato and bacon pizza recipe on the blog for a long time, but somehow it just hadn’t happened yet.

Well, I figured this week would be the perfect time to do it!

One thing we always have a ton of leftover after Thanksgiving dinner is mashed potatoes.

You know how it goes, you slice up a few potatoes, boil them, mash them and somehow throughout the process you end up with a mountain of mashed potatoes and you’re all “how did this happen? It just started as a few small potatoes!”

Well, now you have the perfect recipe to turn those mounds of mashed potatoes into a scrumptious new pizza!

Mashed Potato & Bacon Pizza Ingredients

Ingredients

  • 16 oz pizza dough
    • 3 ½ cups bread flour
    • 1 tsp sugar
    • ¼ oz yeast
    • 2 tsp kosher salt
    • 1 ½ cups warm water
    • 4 tbsp olive oil (divided)
  • 1 bulb garlic
  • 4 tbsp + 1 tsp olive oil (divided)
  • 1 cup mashed potatoes
  • 8 oz fresh mozzarella cheese (thinly sliced)
  • 4 slices bacon (cooked & crumbled)
  • ½ cup parmesan cheese (grated)

Instructions

For this recipe, you can either purchase pizza dough at the grocery store, or make your own.

If preparing homemade pizza dough, combine the flour, sugar, yeast and salt in a large bowl.

Add the water and 2 tbsp olive oil. Combine until a ball of dough forms. Add more water if too dry or more flour if too sticky. Place on a floured surface and knead for 4-5 minutes.

Place the dough into a large bowl coated with the remaining 2 tbsp olive oil.

Cover with plastic wrap and allow to rise for 1 hour.

While the dough is rising, prepare the roasted garlic. (If using garlic mashed potatoes, you can skip this step.)

Preheat the oven to 400°F.

Peel most of the paper off the garlic, then trim the top of the head of the garlic off.

Drizzle with 1 tsp olive oil. Wrap in foil and roast for 40 minutes.

Roasted Garlic Recipe

Once the garlic is roasted, press on the bottom of the paper to remove the cloves. Add to the mashed potatoes and puree.

When the dough has doubled in size, punch it down and divide into 4 pieces.

Spread each piece of dough out on a baking sheet and brush each with ½ tbsp olive oil, top with ¼ cup garlic mashed potatoes and two slices of mozzarella cheese.

Mashed Potato & Mozzarella Mini Pizzas

Place in the oven and bake for 25 minutes.

Remove from the oven and top with the crumbled bacon and parmesan cheese.
