Enjoy the delicious flavors of Tuscany in this quick & easy, 30 minute, one pot recipe for Tuscan Shrimp Scampi Pasta!
I love one pot meals, you love one pot meals, so guess what, today I’ve got a meal for you that requires four pots, just kidding, it’s a totally delicious, and super simple, one pot meal that I know you’re going to love!
Today’s recipe is inspired by the flavors of Tuscany! Olive oil, garlic, lemon, tomatoes, and salt are staple ingredients in the region. Add these ingredients to pasta cooked in white wine with shrimp and you have one seriously flavorful dish made with simple, delicious ingredients!
I stopped by Grocery Outlet to grab a bottle of white wine to use in the recipe, and a bottle of red wine to pair with the final dish.
I picked up a bottle of Nilsson Chardonnay for $3.99, found elsewhere for $12.99, and a bottle of JanKris Syrah for $5.99, found elsewhere for $18.99! And let’s be honest, I picked up a few more bottles to fill my wine rack, because at prices between 50-70% off, you can’t beat that deal!
Oh, but wait, Grocery Outlet is totally beating that deal with their huge wine sale that only takes place twice a year! From Tuesday, March 22 – Saturday, March 26, 2016, all wines will be an additional 20% off their already deeply discounted prices, which means it’s definitely time to stock the wine rack and pick up a couple of bottles to make and pair with this recipe at home!
- 1 tbsp olive oil
- ½ cup onion (diced)
- 4 cloves garlic (minced)
- 1 small serrano chile (thinly sliced)*
- ½ cup white wine (I recommend chardonnay)
- 1 cup fresh diced tomatoes
- 2 tbsp fresh lemon juice
- 2 tbsp fresh basil (chopped)
- 2 tbsp fresh Italian parsley (chopped)
- 1 tsp sea salt
- 1 tsp ground black pepper
- ½ lb spaghetti noodles
- 2 ½ cups chicken broth
- 16 large shrimp (peeled & deveined)
- ¼ cup fresh parmesan (grated)
*The serrano chile definitely adds a little spicy heat to the dish, you can omit it if you’d like no heat, or use ½ tsp red pepper flakes instead for less heat.
Add the olive oil to a large pot or dutch oven over medium heat. Once the oil is hot, add the onion, saute 4-5 minutes. Add the garlic and serrano chile, saute for an additional 1-2 minutes, then add the white wine.
Simmer for 1-2 minutes, then add the diced tomatoes, lemon juice, basil, parsley, salt and pepper.
Break the spaghetti noodles in half, then add to the pot.
Pour the chicken broth over the noodles. Mix everything together and bring to a boil.
Reduce heat, cover and cook for 12 minutes.
Remove the lid and add the shrimp.
Place the lid back on the pot and cook for an additional 3-4 minutes.
Serve topped with fresh grated parmesan cheese.
There’s so much flavor in this dish from all of the fresh ingredients… and a dash of wine never hurt 😉
Be sure to grab the ingredients to make this dish at one of Grocery Outlet‘s 240 locations across California, Idaho, Nevada, Oregon, Pennsylvania, and Washington. And obviously, don’t forget the wine sale, which starts a week from today!
