Last weekend I joined my friends at Litehouse Foods to serve up tacos & cocktails at their booth at the Natural Products Expo in Anaheim.
I had so much fun meeting their team, trying new products and sharing this super simple taco recipe with the thousands of attendees at the expo!
Litehouse’s new line of Green Garden salad dressings are made with 100% extra virgin olive oil, they’re gluten free and delicious!
One of my favorites is the Lime Cumin Dressing, and it was perfect for creating these simple slow cooker chicken tacos!
I mixed the dressing with some of Litehouse’s Instantly Fresh Herbs, poured it over the chicken and voila, just a few hours later my slow cooker had cooked up delicious chicken tacos for dinner!
- 1 tsp ground cumin
- 1 tsp Litehouse Instantly Fresh Cilantro
- 1 tsp kosher salt
- 1 lb boneless, skinless chicken breast
- 1 tbsp Litehouse Instantly Fresh Garlic
- 1 cup Litehouse Green Gardens Lime Cumin Dressing
In a small bowl, combine the cumin, cilantro and salt. Rub this mixture on the chicken breast and place in the slow cooker.
Combine the garlic and lime cumin dressing in another bowl and pour over the chicken in the slow cooker.
Cook on low for 6-8 hours, or on high for 3-4 hours. Remove the chicken and shred, then place back in the sauce in the slow cooker and toss.
Serve on corn tortillas, or tortilla chips for mini tacos, topped with avocado, fresh cilantro, jalapeños, grated cheese or the toppings of your choice.
I also drizzled a little bit of Litehouse’s Cotija Cilantro dressing on top, because it’s one of my absolute favorites!
