This weekend we put our first offer in on a house (eeeeek!) It’s so exciting and terrifying at the same time. This house needs A LOT of work, so I’ve been putting some serious spreadsheet skills to use creating a list of all the work that needs to be done, a timeline for the renovation and budgeting.

Even though it seems totally unnecessary, one of the things at the top of my list is an outdoor patio addition. I love entertaining, especially outdoors in San Diego, so this is really important to me! After living in an apartment for almost a year without having a space to entertain outside (or really inside for that matter!) I can’t wait to get in the new house (fingers crossed!) and fire up the grill for that first outdoor BBQ!

I tried spaghetti noodles, penne pasta and pasta shells, I used various amounts of hot sauce, chicken broth and spices, I used diced chicken, sliced chicken and ground chicken, but I did not give up until the perfect One Pot Chicken Fajita Pasta was created, and now here it is, in all it’s glory!

Easter is just a couple of weeks away and as I thought about new recipes for the holiday, all I kept thinking about was making a spring version of my very popular Butternut Squash Bruschetta Recipe!

That bruschetta appetizer is a HUGE HIT around the fall holidays, so I knew I had to make a spring version for Easer. I decided to roast up beets instead of butternut squash, and toss in fresh basil instead of sage, instead of ricotta, I used goat cheese (because I love the way it pairs with beets!) but I kept the most important piece of the bruschetta in tact, the almighty balsamic reduction drizzle at the end that adds a touch of sweetness and a beautiful final presentation!

It’s Taco Tuesday and only two days away from Little Leopard Book’s 2nd Birthday Party where these delicious Mini Tacos will be served!

Fernanda Peimbert, the chef at Bailiwick where the party will be hosted, asked what kind of hors d’oeuvres I’d like served at the event.  I told her light, fresh and gluten free!

This is the first of four recipes she created for the party that I’ll be sharing with all of you!

I shot the images above during a tasting last week at Bailwick, then I came home and re-created the dish for my upcoming web series, Cooking Secrets of a Single Girl, and to share here on Little Leopard Book.

While Fernanda used pickled red onions, I used raw red onions and pickled jalapeños instead. To be completely honest, I liked her pickled red onions better than my raw red onions, but I did like the addition of pickled jalapeños on mine!  For those of you making the dish at home, you can try either the raw or pickled red onions and decide for yourself which you like best!

Mini Beef and Bacon Taco Ingredients

Ingredients

  • 1 lb ground beef
  • 1/2 cup chopped bacon (approximately 4 slices)
  • 1 avocado
  • 1 lemon (juiced)
  • 1/4 cup fresh parsley (divided)
  • 1/2 tsp cumin
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 2 cups round corn tortilla chips
  • 1/4 cup diced red onion (raw or pickled)
  • 1/4 cup pickled jalapeños (diced)

Begin by adding the bacon to a large skillet over medium-high heat.  Depending how crispy you want the bacon cook for 2-5 minutes, then add the ground beef.

While the meat is cooking prepare the avocado cream sauce by adding the avocado, lemon juice, cumin, salt, pepper and 1 tbsp parsley to a blender or food processor and puree.

Once the meat is cooked, drain the grease and get ready to prepare the mini tacos!

How to make mini tacos

Place the ground beef bacon mixture onto the corn tortilla chips then top with the chopped red onion, jalapeño, avocado cream sauce and a sprig of fresh parsley.

Sometimes the best dinners are the un-planned ones, the ones that come in times of  “staring in the refrigerator panic”!

My plans to make dinner for my friend Evelyn and I on Monday night went awry when I realized the chicken I was going to use to make stuffed chicken had gone bad!

Never fear, the Little Leopard Book fridge was fully stocked so there had to be something in there I could make! I had a pound of extra ground beef left over from the Loaded Calzone I made the night before, extra homemade tomato basil marinara and plenty of Italian cheeses, so Italian Meatloaf it was!

Italian Meatloaf Ingredients

Ingredients

  • 1/2 red onion (diced)
  • 1 red bell pepper (diced)
  • 2 cloves garlic (minced)
  • 1 lb ground beef
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • 1 tbsp fresh basil (chopped)
  • 1/2 cup ricotta cheese
  • 1/4 cup parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 cup Tomato Basil Marinara Sauce

Preheat the oven to 375°.

Place the first 10 ingredients in a large mixing bowl.

Italian Meatloaf Recipe

Mix to combine then press into a loaf pan.

Italian Meatloaf Recipe

Bake for 25 minutes. Remove the meatloaf from the oven, drain any juices and spread the marinara sauce onto the meatloaf.

Return to the oven and bake for an additional 15 minutes.

Slice and serve!  I gobbled this dish up with an extra side of homemade marinara for dipping… because it’s just that good!

Round two of my Mezzetta “Make That Sandwich” Contest series of delicious, creative sandwich recipes is this incredibly flavorful Greek Chicken Salad Sandwich.

When I think Mezzetta, my first thought is “olives and peppers”, which makes me think of Italian and Greek food.  Since I already went Italian in my Grilled Portobello Caprese Sandwich, I decided to “Go Greek” with this one!

For this recipe you can whip up the chicken salad in a jiffy and toss it in the fridge.  Use it throughout the week to fill up your pita bread for a delicious sandwich that will keep you counting down the minutes until lunch every day!

Greek Chicken Salad Sandwich Ingredients

Ingredients

  • 2 cups chicken breasts (boneless, skinless, cooked and shredded*)
  • ¼ cup Mezzetta Garlic Stuffed Olives (chopped)
  • ¼ cup cucumber (chopped)
  • ½ cup grape tomatoes (quartered)
  • ½ cup Mezzetta Roasted Bell Peppers (chopped)
  • ½ cup greek yogurt
  • 2 tsp Mezzetta Crushed Garlic
  • ½ tsp oregano
  • 1 tsp black pepper
  • 2 lemons (1 juiced – 1 sliced in wedges)
  • 4 slices pita bread
  • ½ cup feta cheese

*If you do not have cooked and shredded chicken ready to use, simply boil 1 lb. of chicken, drain and shred.

  • 1 tsp olive oil
  • 1 jalapeño (de-seeded and diced)
  • 1/2 red onion (diced)

  • 1 cup pepper jack cheese (shredded)

After eating a delicious Baked Ziti dish on a Progressive Dinner, my friend and fellow Buffalo Chicken addict, PK, suggested that I make a Buffalo Chicken Baked Ziti.

I re-named it “baked pasta” instead of “baked ziti” because sometimes ziti is not available, like at Trader Joes, where I was purchasing my pasta for this dish 😉

Buffalo Chicken Baked Rigatoni Ingredients

Ingredients

  • 1 lb chicken breasts (boneless, skinless)
  • 1 lb pasta (ziti, rigatoni or penne)
  • 1 cup mozzarella cheese (shredded)
  • 1 cup buffalo sauce
  • 1 cup ricotta cheese
  • 1/4 cup blue cheese dressing
  • 1/4 cup parmesan cheese
  • 1/4 cup breadcrumbs

Begin by pressure cooking or boiling the chicken breasts and cooking the pasta.

Next, shred the chicken breasts, then combine the shredded chicken, cooked pasta, mozzarella, buffalo sauce, ricotta cheese and blue cheese dressing.

Mix all of the ingredients together then pour into an oven safe baking dish.

Place the salmon burger in a small skillet over medium heat and cook for 3-4 minutes.

Last week I took a night off from cooking dinner and was treated to a delicious meal at my friend Crystals house. Of course I couldn’t show up empty-handed so I offered to bring dessert!

I had phyllo dough in my fridge and white chocolate chips in my pantry so I decided to bring them together with tart raspberries.

White chocolate and raspberry are a perfect combination in this delicious dessert pastry.  Flakey phyllo dough encompasses the tasty pair for sweet perfection.

Prep Time: 10 minutes
Cook Time: 10 minutes

Ingredients (makes 10 phyllo rolls)

  • 1 cup raspberries
  • 1 tsp cornstarch
  • ½ tsp lemon juice
  • ¼ cup sugar
  • 10 sheets phyllo dough
  • olive oil cooking spray
  • 1/3 cup white chocolate chips

Start by combining the raspberries, cornstarch, lemon juice and sugar in a small bowl.

The result was a delicious, gluten-free, vegetarian dish that packs way less calories, fat, carbs and sodium than any macaroni and cheese dish you will eat at a restaurant!

The Cheesecake Factory Macaroni and Cheese SIDE DISH packs 51 grams of fat, 1309 calories, 768 milligrams of sodium and 92 grams of carbs, and that’s just the side dish to the main course!!

My dinner portion of Spaghetti Squash with White Cheese Sauce comes in at 275 calories, 12 grams of fat, 335 milligrams of sodium and 10 grams of carbs for a 1 cup serving. Even if you double the serving size to 2 cups, you will still save 759 calories and 27 grams of fat!

Just to make the picture even more clear, if you are counting Weight Watcher points, one side of macaroni and cheese at The Cheesecake Factory counts for 25 points, while my dish weighs in at only 4 points!

Ingredients (serves 4)

  • 1 large spaghetti squash
  • 1 tbsp olive oil
  • 1 tsp black pepper
  • 1 tsp kosher salt
  • 1 cup part-skim mozzarella (shredded)
  • 1/4 cup parmesan cheese (shaved)
  • 1/4 cup ricotta cheese
  • 1/2 cup goat cheese
  • 1/4 cup soy milk
  • 1/4 cup fresh basil leaves (to garnish)

Start by cutting the spaghetti squash in half lengthwise, remove the seeds and brush with the olive oil then sprinkle with the salt and pepper.  Place cut side down on a baking sheet and roast in the oven at 400° for 45 minutes.

Once all of the spaghetti squash has been added to the sauce, separate into four bowls and top with the fresh basil to serve.

Mini Turkey Meatloaves

I know I love it and I’m pretty sure you do too.  That is why I created the (what was supposed to be) “Kicked Up 30-minute Thanksgiving dinner”, which I would now like to call the “Hour-or-so-but-still-well-worth-the-time-kicked-up-Thanksgiving dinner!”

I started off by turning the turkey portion of dinner into mini turkey meatloaves, “kicked up” by adding roasted jalapeños and Serrano chilies, a little chili powder and cumin, then topped off with a sriracha ketchup mixture. I then turned my favorite part of Thanksgiving dinner, the stuffing, into little Spicy Stuffing Cakes!

  • 1 lb ground turkey
  • 1 red onion (chopped)
  • 2 carrots (chopped)
  • 3 stalks celery (chopped)
  • 1 green bell pepper (chopped)
  • 2 cloves garlic (minced)
  • 4 serrano chilies (roasted, de-seeded and chopped)
  • 2 jalapeño peppers (roasted, de-seeded and chopped)
  • 1 tsp fresh sage (chopped)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 2 eggs
  • ½ cup Rice chex (crushed)
  • ½ cup ketchup
  • 2 tbsp Sriracha

Start by adding the chopped onions, carrots, celery and bell pepper to a skillet over medium heat with a drizzle of olive oil.

Next, remove the vegetable spice mixture from the heat and place in a large mixing bowl with the ground turkey. Add the crushed rice chex and egsg.  Use your hands (or a spoon, if you’re civilized like that) and combine the mixture.

Tiramisu Tart

This recipe was inspired by my original plan to make a layered Tiramisu dip for my Housewarming Party.  That never happened. I’ve learned after throwing dozens upon dozens of parties that sometimes I just have to throw in the towel on a couple planned menu items. Sometimes it all comes together and sometimes it doesn’t.

I always start with the party “must haves” and then leave the rest up to fate. As fate would have it, the Tiramisu dip was not made, but two days later this delicious Tiramisu Tart came into my life!

I knew I had to use the Mascarpone and Ricotta Cheese before they went bad but I scratched my original dip recipe. I felt like a dip was more party dessert then “have a slice after work/school” kind of dessert. I decided on a Tart simply because I had an unused Longaberger tart dish sitting on a shelf begging to be used!  I had originally planned to use Ginger Snap cookies for dipping, so I simply ground them up in my food processor and made them into the crust, then filled it with the dip. This made for a great evening treat all week!

Ingredients

  • 1 1/2 cups ginger snap crumbs
  • 4 tbsp butter (melted)
  • 1/4 cup sugar
  • 1 cup mascarpone cheese
  • 1 cup ricotta cheese
  • 1/2 cup sour cream
  • 1/2 cup brown sugar
  • 1/4 cup coffee syrup
  • 2 tbsp marsala wine
  • 1 tsbp cocoa powder
  • 2 tbsp chocolate shavings

Start making the crust by combining the ginger snap crumbs, butter and sugar in a small mixing bowl. Next, press the mixture into a tart pan.

Start the filling by creaming together the mascarpone, ricotta and sour cream.

Torani Syrups can be purchased a lot of places such as World Market or Smart and Final.

If you prefer not to use the syrup, you can replace it with 2 shots of espresso.

when used in this dish makes it gluten-free.

Farmers Market Mini Egg Omelets

When leaving the Caprino Royale goat farm, the owners handed me a half-dozen fresh eggs from their chickens. I knew I had to make these the star of a new dish, and what better time to make a new star dish than Fathers Day! I also visited the Farmers Market in my hometown of Edmond, OK before the big brunch.

While it was a bit smaller than the Los Angeles Farmers Markets I’m used to I did get some beautiful vegetables to use with my farm fresh eggs! I combined eggplant, red onions and green tomatoes for a miniature egg dish packed with flavor!

Prep Time: 10 minutes
Cook Time: 35 minutes

Ingredients (makes 9 mini omelets)

  • 1 large eggplant (peeled and diced)
  • 1 tsp olive oil
  • 1/2 red onion (diced)
  • 1 jalapeño (de-seeded and diced)
  • 6 eggs
  • 1/4 cup milk
  • 1 tbsp parmesan cheese
  • 1 tsp black pepper (divided)
  • 1 tsp salt (divided)
  • 1 tomato (chopped)

Start by cooking the eggplant in olive oil, 1/2 tsp of pepper and 1/2 tsp salt.

After 3-4 minutes add the jalapeño and onion.

While the vegetables are cooking down prepare the egg mixture.

Those are some beautiful fresh eggs there!  Now add in the milk, parmesan cheese and additional salt and pepper.

Next add the chopped green tomatoes to the mixture.

At this time the vegetables should be cooked down.  Spray a muffin tin with cooking spray for easy removal of the mini omelets. Place a small amount of vegetable mixture in 9 spots of a muffin tin.

Fill approximately 1/3 full.

Next, add the egg mixture to each.

Place in the oven at 350° for 35-40 minutes or until egg is cooked through.

Use a small knife around the edges to remove the mini omelets and serve.

I served mine with cinnamon sugar crepes.

These little “parties on a stick” first came into my world at Cafe Sevilla in San Diego.  I became beyond obsessed with them and started making them for every party, event, Monday, you know, whatever!

Blue Cheese Stuffed Bacon Wrapped Dates

The kicker with these is, my Mom loves them!  When the certified pickiest eater in the world likes something, you know it’s good!  I’ve started making them every time I go home for a family event. They are quick, easy and make a great appetizer or party dish!

Bacon Wrapped Date Ingredients

Ingredients (makes 20 dates)

  • 20 dates
  • 10 slices bacon
  • 4 oz blue cheese

Preheat the oven to 375°.

Slice half way through the dates and remove the pits, then add the blue cheese.

Slice the bacon in half then wrap a 1/2 slice around the date.

Next, slide a toothpick through to secure the bacon.

Repeat 19 times.

Place in the oven for 20 minutes, turn the dates over then continue to cook 10-15 minutes or until bacon is crispy.

Depending on the event (and how many new recipes I’m trying to conquer that day!) when I have time I add an Apple Cider glaze on top.

Ingredients

  • 1/4 cup butter (apple butter preferred)
  • 3 tbsp brown sugar
  • 3 tbsp granulated sugar
  • 6 tbsp apple cider
  • 2 tbsp half and half
  • 2 tbsp honey
  • 1 tbsp cider vinegar
  • 1 sprig fresh thyme

Start by melting the butter in a small saucepan, next combine the additional ingredients and whisk well.  Bring to a boil. Reduce heat and simmer for 5 minutes, stirring consistently. Remove from the heat and let stand 3 minutes.

Use a pastry brush to glaze the dates 3-5 minutes before removing them from the oven.

BBQ Buffalo Sauce Chicken

I grew up eating the BBQ baked chicken version of this recipe, but you all keep asking for more and more buffalo chicken recipes and I love to eat them so I added the delicious buffalo sauce to make a delectable sweet and spicy chicken dish!

BBQ Buffalo Chicken Ingredients

Ingredients (serves four)

  • 4 chicken breasts (boneless, skinless)
  • 1/2 cup BBQ sauce
  • 1/3 cup buffalo sauce

Place the chicken breasts in an oven-safe dish with lid, top with BBQ sauce.

Baked BBQ Chicken

Then add the buffalo sauce.

Mix the sauce’s together on top of the chicken breast.

Easy Recipe for Buffalo Chicken

Cover and place in the oven at 375° for one hour.

That’s all! Just wait for it to cook and soak in all the sauces. After one hour, remove the lid and the sauce will be bubbling and chicken cooked through.

I don’t think I need to re-iterate my love for buffalo chicken, but just in case, I love it! And this recipe is so quick and easy to make, there is no excuse not to enjoy it yourself!

On Sunday I used the pressure cooker to cook 3 chicken breasts, I then shredded the chicken and placed it in a plastic storage container in the fridge.  By doing this I was able to make the wrap for lunch in 5 minutes and enjoy all its buffalo amazingness!

Ingredients (serves 1)

  • 1 large flour tortilla
  • 2 tbsp blue cheese dressing
  • 1/4 cup spinach
  • 1 cup chicken breast (cooked and shredded)
  • 2 tbsp buffalo sauce
  • 1/4 cup carrots (shredded)
  • 1/4 red onion (thinly sliced)
  • 1 tbsp blue cheese crumbles

Start by pouring the blue cheese dressing in the center of a tortilla.

Next, add the spinach on top of the blue cheese dressing.
