Let me introduce you to my latest must make recipe! Seriously y’all, the recipe idea sounded great in my head, but the end result was even better than what I could have imagined!

Watermelon Tomato Salad

What says summer more than fresh watermelon? ¬†We’ve hit the peak of summer and this little salad is the perfect side for a BBQ or a fresh and healthy lunch!

Ingredients

  • 3 cups cubed (or balled) watermelon
  • 2 cups grape tomatoes (sliced in half)
  • 5 oz feta cheese
  • 1/4 cup fresh mint (chopped)
  • 1/2 red onion (chopped)
  • 2 tbsp balsamic vinegar
  • 1/4 cup olive oil

Start by slicing open a watermelon and cutting out cubes or use a watermelon baller (if you ball like that, haha) as my Dad so perfectly displays! He’s such a baller ūüėČ

Place into a large bowl, then begin slicing the grape tomatoes in half and add to the watermelon.

Next, add the feta cheese, mint and onion.  Chill in the refrigerator until ready to serve.

Before serving drizzle with the olive oil and vinegar and toss well.

This dish was a huge hit at my family BBQ last month, along with its friends the pulled pork, skillet potatoes, jicama slaw and smoked brisket!

… yeah, that’s a lot of food! ¬†I¬†‚ô• BBQ’s!

Tomato Basil Double Cheese Crescent Triangles

Tomato Basil Feta Crescent Bites

These Double Cheese Crescent Triangles are adapted from the Pillsbury version I’ve been making for years!

I added fresh tomatoes and basil for an extra burst of flavor which make these the perfect side or appetizer at any Italian dinner!

Double Cheese Crescent Triangle Ingredients

Ingredients

  • 4 oz tomato basil feta cheese
  • 1 tbsp fresh basil (minced)
  • 1 tbsp tomatoes (minced)
  • 1 tbsp green onions (chopped)
  • 1 egg (divided)
  • 2 tbsp parmesan cheese (divided)
  • 1 can Crescent rolls

Preheat the oven to 375¬į.

Start by combining the feta cheese with the fresh herbs and vegetables in a small mixing bowl.

Next crack the egg into a separate small bowl and whisk well. Measure out 2 tbsp of egg and add to the feta herb mixture along with 1 tbsp of parmesan cheese.

Roll out the crescent dough and press perforations together. Cut into 24 squares.

Now place a small amount of the cheese herb mixture in each of the squares.

Next fold the crescent dough over the cheese into triangle shapes and place on a baking sheet.

Now brush the tops of the pastries with the additional whisked egg, then top with the remaining parmesan cheese.

Place in the oven for 11 minutes.

Today’s lunch was inspired by what was in my refrigerator… beets!

Caramelized Beet and Feta Cheese Salad Recipe

I usually make a carmelized beet and goat cheese salad that involves arugula and avocado… but I didn’t have goat cheese, arugula or avocado so what else¬†did¬†I have in there?¬† Well I had feta, that could replace the goat cheese, I had onions and tomatoes so there I go!

Caramelized Beet and Feta Salad Ingredients

Ingredients: (Serves 1)

  • 8 oz baby beets (steamed & peeled)
  • 1/2 red onion (chopped)
  • 1 tbsp¬†olive oil
  • 1 tbsp Balsamic Vinegar
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 1/2 tomato (chopped)
  • 2 tbsp feta cheese

Preheat the oven to 450 degrees. Line a baking sheet with foil then place the beets on top.

Sprinkle the chopped onions over the beets then drizzle with olive oil and balsamic. Top with salt and pepper.

Caramelizing Beets

Place in the oven for 6 minutes, toss, then cook for an additional 6 minutes.

Remove from the oven and place the beets on a plate. Pour the sauce from the foil onto the beets then top with the chopped tomatoes and feta cheese.

Easy Beet and Feta Salad Recipe

The result was D-E-L-I-C-I-O-U-S and healthy! Don’t even get me started on my purple food obsession, but beets pack tons of antioxidants, as well as betanin pigments which have been shown to lessen tumor cell growth, I’m sold!
