Today, I’m celebrating the 3 year blogoversary of Little Leopard Book. It was three years ago today that I was sitting on my couch in LA, when I opened my laptop and wrote this first post.

Hey Little Leopard Book lovers. Erin here, the new intern around the Little Leopard Book offices. All summer long I’ll be coming at you with the latest health tips, recipe tricks, and all of the fun posts that I can think of! For my first post, we thought it was only fitting to introduce a little bit about myself. After all, I have a feeling we’re going to become very good friends. I grew up in Northern California in the East Bay town of San Ramon.

While I loved growing up in “the bay”, college seemed like the perfect opportunity to try out life in the most perfect city on Earth… you guessed it, San Diego! I just finished my 4th year at San Diego State University where I was a member of the Epsilon Sigma Chapter of Delta Gamma Fraternity. While a DG I held the positions of both social chair and president. I graduated from SDSU with a Bachelor’s degree in political science. While I loved my political science degree, I recently realized I wasn’t the perfect fit for a career in law or politics. That’s when I decided to switch it up! I will be attending the University of Southern California this fall to pursue my M.A. in journalism. For now I am spending the summer in San Diego and having as much fun as I can learning and playing at Little Leopard Book! I am so excited to get to know all of you following LLB and hope you enjoy reading my posts as much as I enjoy writing them.

Why I love Little Leopard Book:

Little Leopard Book truly is optional eating. Whether you’re a full time vegetarian, a lover of buffalo sauce, or conducting a trial run of the paleo diet, there is something for you. There are an extensive variety of recipes that are both easy and fun to make!

What is my favorite type of food?

My boyfriend jokes that my favorite food is avocado mainly because I put it on absolutely everything! While he may be right, I would say my favorite type of food is Italian. One day I hope to travel through Italy, or rather eat my way from city to city. They know what they are doing! I can’t wait to try the LLB Italian Crab Cakes!

 What do I like to do during my free time?

When I’m not coordinating mayhem at LLB, I love to spend time with my family and friends. I like anything that involves being outdoors. I’ll try anything once, I love seeking out new experiences, and meeting new people. You can find me browsing farmers markets, shopping in Pacific Beach (and spending way too much), or running along Mission Bay. I also love finding cool new restaurants and trying all types of craft beer. San Diego is one of the top beer cities in the world, have to take advantage of it right?

 What is my favorite LLB recipe?

As you have probably noticed, here at LLB we have a slight buffalo sauce obsession, including myself. The buffalo sauce recipes are definitely my favorite and I am making it my mission to try all of them, starting with the Buffalo Chicken Burger.

What is my favorite dish to make?

I don’t necessarily have a favorite dish I like to make, but I do have a favorite cooking holiday. My first attempt at cooking was three years ago when I decided I no longer wanted the family plethora of casseroles at Thanksgiving. I took on the holiday (besides pulling, who knows what, out of the uncooked turkey) by myself and decided to begin my own search for recipes. From that point forward, Thanksgiving in my household has been known as my thing. It is what first inspired me to try cooking and every year I continue the search for new flavors and healthy alternatives to traditional Thanksgiving eats.  I can’t wait to try Little Leopard Book’s Cranberry Glazed Turkey Breast this year!

How to Make Your Own Mimosa Bar

Make Your Own Mimosa Bar

Mimosa bars are a super fun addition to holiday brunches, wedding showers and summer parties!

I created one for brunch last Sunday and it was a huge hit, so I wanted to share exactly what you need to make your own at home!

Supplies Needed

Begin by placing the tablecloth to your table, next place the “Mimosa Bar” chalkboard sign on the tablecloth.

I picked up this fun chevron green tablecloth and adorable owl chalkboard sign at Hobby Lobby!

Next, add the champagne flutes to the table.

I purchased fresh fruit from Polito Farms at the Little Italy Mercato and juiced them myself (with the help of my Dad!) using my Healthy Juicer!

Next, pour the juices into the bottles, then add tags to the bottles with ribbon for each juice flavor!

Kenneth is responsible for the amazing images you see around LLB’s social media pages which came from the very first Little Leopard Book photo shoot almost exactly a year ago. I was so excited when the opportunity arose to work with him again!

I’m actually kind of obsessed with this apron I found at World Market the morning of the shoot!  It’s going to be so fun for summer BBQ’s!

We then moved the shoot outdoors to catch me in one of my favorite places: at the grill!

Then it was back inside to mix up some more cupcake batter while showing love to my favorite NBA team, the OKC Thunder!

Next, we grabbed a couple images while I wrote out my dinner menu on the awesome Hanging Wall Menu I created!

This look was very special to me because it included two of my most prized possessions: the original Little Leopard Book and my Grandma Meme’s crystal bell.

When I was a little girl my Meme always let me ring the bell when dinner was ready.  I took such pride in letting everyone know it was time to eat!  When we lost her a couple years back, I asked my Dad if I could have the bell so that I could continue on my tradition of ringing the dinner bell in her honor. Every day I look at the bell and remember the amazing woman she was and all that she taught me about cooking, food, life and family!

As the sun began to set on the LLB photo shoot, we grabbed one last look with a very special Little Leopard Oven Mitt, given to me at Christmas by my Dad!

Little Leopard Book Holiday Photo Shoot

Last week I had the pleasure of working with Photographer, Drew Casey, for the first time. A fellow Okie with several mutual friends it was the perfect match for the Little Leopard Book holiday shoot!

I love the holidays, decorating for them, cooking for them and most of all… throwing parties for them!

I wanted to take pictures that incorporated all of the above to show my little leopard holiday spirit across the blog and around the LLB social media universe!  Thanks to Drew for helping me accomplish just that!

My Mom began her career with the company when her second little bundle of joy (me!) came into the world. I think she realized from the day I was born that I was going to need a lot of attention (boy was she right!) and she should probably find a job that she could do from home with a flexible schedule!

Anniversaries, Adventures and Announcements

Anniversaries

Today I celebrate the one year anniversary of LLB, and what a year it has been! What started as a virtual place to write down my stories, ideas and recipes, has turned into an entrepreneurial culinary endeavor.

Over the past year my top two posts were A Girl with a Plan, a Blog and a Craving for Adventure and my Summer Adventure Travel Schedule. I’m so excited that people were interested in my “Summer Adventure” and got involved!  Look for an upcoming post re-capping the entire adventure! Coming in at number three was my post on How to Make Canvas Wall Art.  Leave it to Pinterest to make one of the top posts on a food blog, a post about a DIY project!

My top recipe posts were my Strawberry Kiwi Cupcakes and my re-creation of Sonic’s Strawberry Kiwi Slush.  Um I’m seeing a trend here, maybe I should just stick with Strawberry Kiwi recipes from now on 😉

The top search terms for my blog were little leopard book (that one’s pretty obvious!), strawberry kiwi cupcakes (the above now makes more sense!) and Russell Westbrook Girlfriend. Um, what?  Yes, due to the popularity of the OKC Thunder, one young stud player and an infamous cake I made for my brother’s girlfriends birthday, the number three search term used to find my blog is “Russell Westbrook Girlfriend”!

Adventures

A year ago I was living in Los Angeles, attending college for Broadcast Journalism and dreaming of one day being on the Food Network. Since then I completed my degree in Broadcast Journalism, spent the summer on an adventure across the United States and moved back to San Diego.

I have turned my little blog into a little business with the hopes of growing into a big blog and a big business in the near future!  I have returned to school, once again, to study the art and business of food and nutrition. I am pursuing a second degree in Culinary Entrepreneurship and could not be more excited to share everything I learn on the little leopard book!

Announcements

On the business side of the blog, I am now offering my blogging and social media services to bars and restaurants. I have a unique approach when it comes to bringing new followers to the business, as well as capturing the attention of current social media followers. I am also combining my previous years of experience in event planning and ever-expanding knowledge in the kitchen to offer small catering party options, cooking classes and event planning services.

I am also adding a couple of new features to the LLB that I am SUPER excited about!

The first is “Single Sundays“.  This is where I will post simple recipe options for those of you cooking for one.  I always hear my friends complaining to me that they don’t want to go through all the effort just to cook for themselves. Well, Sunday’s are now dedicated to you. Simple, quick meals that can be made throughout the week and enjoyed in the comfort of your own company with complete control of the remote!

The second is “Chopped Challenge Thursdays“. I am completely obsessed with the show “Chopped” on the Food Network.  If you are not a foodie and don’t have the Food Network on 24/7 at your house you might have missed the show, so let me give you a 1 line run-down of the concept. One basket, four mystery ingredients, one dish. The ingredients range anywhere from cherry cola to sardines and jelly beans to lamb chops.  Here’s where you all come in! (Yay, fun, you get to play!) On Monday, I will make an announcement on my Facebook page (if you haven’t yet, just quickly slide your finger over your mouse and to the right, up a little, a little more and click the like button, see wasn’t that easy? 😉 ) I will be asking for the four “mystery” ingredients for my “Chopped Challenge Basket” that week. The first four people to respond will have their ingredients turned into a dish for my “Chopped Challenge Thursday” recipe post! Fun, interactive, challenging, exciting!

When I began the Little Leopard Book I really had no idea where to start. One thing I knew was that I didn’t want an empty blog, so I decided to add a “quotes” page to enhance the content (and my previously naked menu bar).

Less than a year later I have a menu bar that is quickly filling up!  With the soon-to-come “Restaurant Reviews” and “Bucket List Items” I have decided to retire the original quotes page.

The Little Leopard Photo Shoot

Today I wanted to share with you all my favorite images from a recent photo shoot I did with photographer Kenneth M Ruggiano. I wanted the shoot to encompass who I was as a chef, foodie, blogger and person!  Kenneth did just that! He is an amazingly talented photographer and just so happens to be from my home state of Oklahoma!!  I hope you all enjoy and look for a new recipe tomorrow on the little leopard book 🙂

With the ever-expanding Little Leopard Book, I decided to actually  give some background on myself through my “about” page rather than being ambiguous and just talking about the things I love!

With that said the original page with the “Things I Love” was the starting point for a blog that I was not sure what was to become of! After months of blogging and thousands of hours of Tweeting, Facebooking and Pinteresting about the blog, the Little Leopard Book has formed an identity around food, cooking, party planning and a little bit in between!

Heart Shaped Cookie Cutter

Gluten Free Chicken Parmesan

This 30 minute Gluten Free Chicken Parmesan recipe substitutes gluten free breadcrumbs and adds homemade marinara sauce for a delicious twist on an Italian favorite!

I have to start out this blog post by expressing my eternal gratitude to Jenna’s Everything Blog for being one of my first inspirations to start blogging!

My brother was lucky enough to meet Jenna and her husband Adam when he moved into the college dorms over a decade ago and they still remain the best of friends!  Jenna’s posts are entertaining and hilarious, her pictures are stunning and her recipes exquisite!

The means for my rambling about the greatness of Jenna is that this is my first blog post recipe inspired by a “Jenna original”!

Gluten Free Chicken Parmesan Ingredients

Ingredients (serves 4)

  • 2 chicken breasts
  • 1 tbsp dried oregano
  • 1 tbsp dried thyme
  • 1/4 cup fresh basil (chopped)
  • 2 tsp kosher salt
  • 1 tsp pepper
  • 1/3 cup Gluten Free Breadcrumbs
  • 2 tbsp grated parmesan
  • 2 tbsp olive oil
  • 2 cups chunky tomato marinara sauce (click for recipe)
  • 4 oz fresh mozzarella (thinly sliced)
  • 8 oz gluten free pasta (cooked according to package directions)

Preheat the oven to 500°

Slice the chicken breasts in half lengthwise. Next, mix the oregano, thyme, basil, salt, pepper, breadcrumbs and parmesan in a small bowl.

Drag the chicken through the breadcrumb mixture and place on top of the olive oil in an oven safe skillet over medium heat. Next, brown the chicken on the stove, 2-3 minutes per side.

Turn the heat off and cover the chicken breasts with the sliced mozzarella.

Next, add the tomato sauce.

Cover the skillet and bake in the oven for 10 minutes.

Remove the cover and bake for an additional 5 minutes. That delicious fresh mozzarella should now be nicely melted in!

Serve with the cooked pasta.

Gluten Free Chicken Parmesan

Ok yeah, it’s as good as it looks!!!  Writing this post takes me right back to the happiness of that first bite.

Fresh Mozzarella Chicken Parmesan

♣ Vegetarian Option: Substitute tofu for chicken.

♦ Gluten Free Option: The chicken parmesan is gluten-free. Serve with gluten-free pasta or a side of steamed vegetables instead of pasta.

Prep Time: 15 minutes

Cook Time: 15 minutes

Serving Size: 4

Ingredients

  • 2 chicken breasts
  • 1 tbsp dried oregano

  • 2 tsp kosher salt
  • 1 tsp pepper
  • 1/3 cup Gluten-Free Mary’s Gone Crackers “Just the Crumbs” Breadcrumbs
  • 2 tbsp grated parmesan
  • 2 tbsp Enzo Basil Olive Oil
  • 2 cups chunky tomato marinara sauce (click for recipe)
  • 4 oz fresh mozzarella (thinly sliced)
  • 8 oz pasta (cooked according to package directions)

Instructions

  1. Preheat the oven to 500°
  2. Slice the chicken breasts in half lengthwise.
  3. Mix the oregano, thyme, basil, salt, pepper, breadcrumbs and parmesan in a small bowl.
  4. Drag the chicken through the breadcrumb mixture and place on top of the olive oil in an oven safe skillet over medium heat.
  5. Brown the chicken on the stove, 2-3 minutes per side.
  6. Turn the heat on the stove off, cover the chicken breasts with the sliced mozzarella.
  7. Add the tomato sauce to the skillet.
  8. Cover the skillet and bake in the oven for 10 minutes.
  9. Remove the cover and bake for an additional 5 minutes.
  10. Serve with cooked pasta.

Grilled Jalapeño Poppers

These little morsels were meant to be a part of my Superbowl Party menu, but with so little time and so much over-ambition they did not make it on to the smorgasbord of hor d’oeuvres last Sunday. Never fear, two days later these little poppers made the perfect side for my Mexican Meatloaf!

Ingredients (serves 4)

  • 10-12 Jalapeño Peppers
  • 4 oz goat cheese
  • 1/4 cup parmesan cheese
  • 1/4 cup cheddar cheese
  • 1 small tomato (chopped)
  • 2 tbsp green onions (chopped)
  • 1/2 tsp salt

Mix all ingredients except the Jalapeños in a small bowl. Slice the jalapeños lengthwise and remove the seeds.

Stuff the cheese mixture into the jalapeños.

Place the stuffed jalapeños on a pre-heated grill covered in cooking spray.

Grill the peppers 5-7 minutes or until cheese is melted and voila! These poppers make a great side dish for Mexican food or a fun Gameday Grub snack!
