Last night was “Taco Tuesday” at my house and I decided to toss together a healthy grilled salmon taco for the occasion!
What better way to top a Grilled Honey Chipotle Salmon Taco then with fresh mango salsa!
This salsa is so easy to make and is perfect atop fish, chicken, tacos or served with chips for dipping!
- 1 mango (diced)
- 3 roma tomatoes (diced)
- 1/4 cup red onion (minced)
- 1 jalapeño (de-seeded and minced)
- 1 tbsp fresh cilantro (minced)
- 1 lime (juiced)
Add the mango and tomato to a small bowl.
Add the onion, jalapeño and cilantro.
Squeeze the lime juice over the top and mix together.
