On Friday, I hosted my last segment on CW6 San Diego. Unfortunately the station closed after over 60 years on the air. For the last four years, I’ve hosted dozens and dozens of segments on CW6 and loved every one of them!

Hosting a segment on their last day on air meant the world to me and I couldn’t think of a better way to send them off than with a deliciously refreshing Mango Margarita!

Over the years, we’ve drank mimosas, Moscow mules and martinis together on the show, so I only found it fitting that our last segment together would include a cocktail!

Last night was “Taco Tuesday” at my house so I decided to toss together healthy, grilled salmon tacos for the occasion!

Chipotle honey glazed salmon is placed in warm corn tortillas & topped with fresh mango salsa in this mouth-watering recipe for healthy salmon tacos!

I made Chipotle Honey Glazed Salmon Tacos. These tacos are sweet, spicy and oh-so-delicious. I couldn’t top such an amazingly flavorful taco with just any old salsa, so I whipped up this fresh mango salsa to top these scrumptious tacos!

This mango salsa is so easy to make and not only is it perfect on salmon tacos, it’s also delicious on top of grilled chicken, steamed fish or served with chips for dipping!

Mango Salsa Ingredients

Ingredients

  • 1 mango (diced)
  • 3 roma tomatoes (diced)
  • 1/4 cup red onion (minced)
  • 1 jalapeño (de-seeded and minced)
  • 1 tbsp fresh cilantro (minced)
  • 1 lime (juiced)

Add the diced mango and diced tomato to a small bowl.

Add the minced red onion, minced jalapeño and minced cilantro.

Squeeze the lime juice over the salsa and mix everything together.

  • 1 mango (diced)
  • 3 roma tomatoes (diced)

I knew I wanted to create something other than just salads for the segment so I decided that lettuce wraps would be a perfect alternative to traditional wraps or sandwiches because lettuce contains virtually no sodium!

Mango Avocado Ahi Lettuce Cups

This entire dish contains only 60 mg of sodium, which is about 7 mg per lettuce cup!  That’s a whole lot of delicious without a whole lot of sodium!

Mango Avocado Ahi Lettuce Cups Ingredients

Ingredients

  • 1 mango (diced)
  • 1 avocado (diced)
  • 1/2 red onion (diced)
  • 1/2 lb fresh sushi-grade ahi tuna (diced)
  • 1 lime (juiced)
  • 1 tbsp olive oil
  • 1 tbsp fresh cilantro
  • 1/4 tsp black pepper
  • 1 head butter lettuce

Begin by combining the mango, avocado, red onion and ahi in a small bowl. Next squeeze the lime juice over the mixture, then drizzle with the olive oil. Sprinkle the cilantro and black pepper on top.

Stir together, then spoon the mixture into leaves of butter lettuce.
