Growing up, I was never a fan of potato salad, to be fair, I wasn’t a fan of a lot of foods, blasphemy, I know, the food blogger that was a picky eater growing up, say it ain’t so, oh, but it is!

A few years after moving to California for college, I started trying new foods and recipes, and realized what I had been missing all of these years, ahem, guacamole, the green stuff, freaking delicious, fish, sushi, yes, please, but one thing I can say I’ve never really taken a liking to is potato salad. I’m guessing my aversion to mayonnaise might have a little something to do with that!

So today I’m making a potato salad that’s colorful, flavorful, sans mayonnaise and filled with tons of green goodness!

It’s creamy, delicious, dairy free, vegan and PALEO!

Healthy Walnut Sage Pesto

This Pesto sauce is perfect on chicken, pork or fish, but I also have a couple unique recipe uses for the scrumptious sauce that I will release tomorrow and Saturday!

Walnut Sage Pesto Ingredients

Ingredients

  • 1 cup fresh sage
  • 1 cup fresh Italian parsley
  • 4 cloves garlic (crushed)
  • ½ tsp black pepper
  • 1 cup walnuts
  • ½ cup olive oil
  • 1 lemon (juiced)
  • ¼ cup water

Begin by adding the sage and parsley to a food processor.

Next, add the garlic, black pepper and walnuts.

Puree in the food processor for 15 seconds then add the lemon juice. Turn the food processor back on and add the olive oil through the pour spout at the top.

Next, add the water while continuing to puree an additional 30-60 seconds or until all ingredients are combined.

Paleo Walnut Sage Pesto

Prep Time: 5 minutes

Yield: App. 2 Cups

Paleo Walnut Sage Pesto

Ingredients

  • 1 cup fresh sage

When making my “Green Pizza” for St Patty’s Day I knew I had to use a pesto to make the sauce green to go with the theme of the pizza!

I made a pesto sauce in a Home Ec class in Middle School and that was the first and only time I had the sauce until a few years ago. Not a lot of pesto in Oklahoma 😉

So glad it is back in my life now and I wanted to make my own to top the super fresh and healthy “green pizza”!!

Basil Pesto Ingredients

Ingredients (makes 1/2 cup)

  • 2 cups fresh basil
  • 2 cloves garlic (chopped)
  • 1/4 cup chopped walnuts
  • 1/2 cup olive oil
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 cup parmesan cheese

Begin by placing the basil and garlic in a blender or food processor.

Next, add the walnuts.

How to make Walnut Basil Pesto

Blend well.

Add the salt, pepper and olive oil.
