Going “Glutenless in August” has also left me “Pizza-less in August”!

Since we’ve already established my obsession with pizza (see: Prosciutto Arugula Thin Crust Pizza, Deep Dish Pepperoni Pizza and Roasted Vegetable Vegan Pizza, to name a few) you can see how this could be a problem for me!

Last week I was really craving pizza so I did what any good food blogger would do, I placed all of the delicious components of pizza on top of polenta in little ramekins to form mini polenta pizzas!

While the texture isn’t the same as traditional pizza, the flavor sure is!

As I dug my fork into one of these little pizza delights, the pesto seeped into the creamy polenta, giving it amazing flavor, while the roasted tomatoes give it a burst of freshness, topped with creamy mozzarella and crispy bacon, this dish is packed with so many amazing flavors, it was really hard to put my fork down!

Mini Polenta Pizza Ingredients

Ingredients

  • 2 cups cherry tomatoes
  • 4 cloves garlic
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • ¼ tsp black pepper
  • 2 tbsp fresh basil (chopped)
  • 4 slices bacon
  • 18 oz polenta
  • ¼ cup sun dried tomato pesto
  • 1 cup mozzarella cheese
  • ¼ cup sun dried tomatoes

Preheat the oven to 400°.  Place the tomatoes and garlic on a baking sheet covered with foil bent into a basket shape.  Drizzle with the olive oil and vinegar, then top with the black pepper and fresh basil.

Place into the oven for 25 minutes.

While the tomatoes are roasting, cook the bacon until crispy.

Place the polenta in the bottom of 6 soufflé ramekins.

Top with the pesto.

Then the roasted tomatoes and garlic.

Sometimes a random craving will lead to a beautiful new discovery. This dish is definitely one delightful discovery!

I ate two of these for dinner, but one would be great as a starter or hors d’oeuvre at a dinner party!

The presentation is beautiful and they look as if they’re “high maintenance pies” but really they’re very quick and easy to prepare!

♣ Vegetarian Option: Omit the bacon to make this recipe vegetarian.

♦ Gluten Free Option: This recipe is gluten free.

Mini Polenta Pizzas with Roasted Tomatoes and Bacon

Prep Time: 10 minutes

Cook Time: 35 minutes

Yield: 6 mini pizzas

Mini Polenta Pizzas with Roasted Tomatoes and Bacon

Ingredients

A Serious Slice with a Serious Sauce

This weekend I headed out of my little Italian neighborhood in San Diego to visit friends in Phoenix, Arizona. While I was there I got to enjoy one of my favorite pizza spots with the best sauce ever!

Jimmy and Joe’s is a phenomenal find in the suburbs of Phoenix, Arizona. They serve up serious slices with a serious sauce, Joe’s sauce, to be exact.

One slice of pizza weighs in at over one pound, with the potential to weigh over 2 pounds depending on the toppings (now that’s serious!) The restaurant has over 11 specialty pizzas but I like to make my own by combining almost a third of their over 25 toppings!

Bell peppers, red onions, jalapeños, and we can’t forget about the meat, Italian sausage, meatballs and bacon, finished off with bits of their homemade herb ricotta makes for one unforgettable slice of pizza!

Prosciutto Arugula Thin Crust Pizza

Hi, my name is Whitney and I’m a pizza addict.  Yes, I will admit, I have probably never met a pizza I didn’t like.

That could be the reason this is my 4th pizza recipe on the blog.  From thin crust, to deep dish, vegan to gluten-free, I’m a fan!

Ingredients (crust – makes 1 pizza)

  • 1/2 cup water
  • 1/4 oz yeast
  • 2 cups flour
  • 1/4 tsp salt

  • 1 cup pizza sauce
  • 3 cups arugula
  • 4 oz prosciutto
  • 1/4 cup romano cheese
  • 1/4 cup parmesan cheese

Start making the crust by combining the water and yeast.  Allow to sit for 5-10 minutes or until the mixture begins to bubble.

Next, add the flour, salt and mix until a solid ball forms. Knead the ball of dough for 5 minutes then place into a large greased bowl and cover.

Allow to rise for 30-45 minutes then place the dough on a baking sheet and roll into a thin crust.

Next, spread the pizza sauce on top.  I used the same recipe that I used on my deep dish pizza because it was amazing! I highly recommend you do the same!

Next, top with 2 cups of the arugula.

Then with the strips of prosciutto.

Finally top with the parmesan and romano cheeses.

Bake at 425° for 10-12 minutes.  Remove from the oven and top with the additional cup of arugula.

♣ Vegetarian Option: Remove the prosciutto and replace with red onions for a delicious vegetarian pizza.

♦ Gluten Free Option: Replace the flour with a gluten-free flour blend for a crust that will come out similar to my Gluten Free Italian Garlic Rolls or replace the crust completely with my cauliflower based Gluten Free Pizza Crust.

Deep Dish Pizza with Chunky Tomato Sauce

My last night in Oklahoma I decided to make one of my families favorites, pizza! The result was a thick and delicious deep dish pizza with one amazing sauce!

Deep Dish Pizza Ingredients

Ingredients (crust – makes 2 12″ crusts)

  • 1/4 oz yeast
  • 1 1/4 cups warm water
  • 3 cups flour
  • 1 tsp salt
  • 1/2 cup cornmeal
  • 1/4 cup olive oil

Start by combining the yeast and water in a large bowl. Allow to sit for 5 minutes or until the mixture bubbles.

Next, add the flour, salt, olive oil and cornmeal.

Mix well until a large ball forms.

Next, place onto a floured surface and knead for 5 minutes.

Now, place the ball back into a bowl covered in cooking spray.

Cover with plastic wrap and allow to rise for an hour.

Ok, don’t tell me that didn’t just amaze you!?  Every time, the fact that this little ball turns into this giant monster just baffles me!  It’s the little things in life people 🙂

Now it’s time to deflate the amazingness and form the dough in a cast iron skillet.

Now it’s time to take it back a couple notches. Remember that hour while you were waiting for the amazing dough transformation? Yes, that hour while you were sipping wine and relaxing?  Oh yeah, that one!  Lets throw a little sauce making in there as well!

Chunky Tomato Marinara Ingredients

Ingredients (sauce – makes app. 4 cups)

  • 2 tbsp olive oil
  • 4 cloves garlic (minced)
  • 3 tomatoes (pureed in food processor or blender)
  • 1 can (28 oz) peeled plum tomatoes (roughly chopped)
  • 1 can (6 oz) tomato paste
  • 1/4 cup red wine
  • 2 tbsp fresh basil (chopped)
  • 1 tsp dried parsley
  • 1 tsp black pepper
  • 1/2 tsp oregano
  • 1/2 tsp salt

Start by heating the olive oil in a large skillet, then sauté the garlic for 1 minute in the oil.

Next add the pureed tomatoes, chopped plum tomatoes, tomato paste and red wine to the garlic.

Now it’s time to add in the spices!

Mix together and bring to a simmer.

Cover and cook on low for 20-25 minutes.

Let me tell you people, this sauce is a-m-a-z-i-n-g! The secret: red wine, obviously!  Doesn’t wine make everything better?

Now it’s time to prepare the toppings.  I went traditional with pepperoni, but added a kick with red peppers and the creamy goodness of fresh mozzarella.

Ingredients (toppings)

  • 25 pepperoni slices
  • 1/2 roasted red bell pepper (sliced)
  • 8 oz fresh mozzarella
  • 1/4 cup shredded parmesan

While the sauce is simmering and dough is rising place the pepperonis in a skillet to cook off some of the grease.

Fried Pepperonis

After 5-7 minutes, remove the pepperonis and place in between 2 paper towels to soak up the grease.

At this time, roast the bell pepper over an open flame on the stove or grill or place the bell pepper on a baking dish closest to the heat source in the oven at 450° for 20 minutes or until the outside skin is charred. Allow to cool then remove the blackened skin and cut into slices.

At this point we should be ready to put this baby together! Start by arranging the pepperonis on the crust.

Next add the red bell peppers.

Now top with slices of mozzarella cheese.

Add the parmesan cheese then smother this baby with that amazing sauce.

Yes, I added some additional shredded mozzarella, don’t judge me, my family loves cheese! You’re welcome to do the same, I won’t judge 🙂

Now pop this pie in the oven at 425° for 30 minutes or until the crust is golden brown and sauce is bubbling.
