Mini Tacos with Avocado Cream Sauce

Mini Baja Tacos at Bailiwick San Diego

It’s Taco Tuesday and only two days away from Little Leopard Book’s 2nd Birthday Party where these delicious Mini Tacos will be served!

Fernanda Peimbert, the chef at Bailiwick where the party will be hosted, asked what kind of hors d’oeuvres I’d like served at the event.  I told her light, fresh and gluten free!

This is the first of four recipes she created for the party that I’ll be sharing with all of you!

I shot the images above during a tasting last week at Bailwick, then I came home and re-created the dish for my upcoming web series, Cooking Secrets of a Single Girl, and to share here on Little Leopard Book.

While Fernanda used pickled red onions, I used raw red onions and pickled jalapeños instead. To be completely honest, I liked her pickled red onions better than my raw red onions, but I did like the addition of pickled jalapeños on mine!  For those of you making the dish at home, you can try either the raw or pickled red onions and decide for yourself which you like best!

Mini Beef and Bacon Taco Ingredients

Ingredients

  • 1 lb ground beef
  • 1/2 cup chopped bacon (approximately 4 slices)
  • 1 avocado
  • 1 lemon (juiced)
  • 1/4 cup fresh parsley (divided)
  • 1/2 tsp cumin
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 2 cups round corn tortilla chips
  • 1/4 cup diced red onion (raw or pickled)
  • 1/4 cup pickled jalapeños (diced)

Begin by adding the bacon to a large skillet over medium-high heat.  Depending how crispy you want the bacon cook for 2-5 minutes, then add the ground beef.

While the meat is cooking prepare the avocado cream sauce by adding the avocado, lemon juice, cumin, salt, pepper and 1 tbsp parsley to a blender or food processor and puree.

Once the meat is cooked, drain the grease and get ready to prepare the mini tacos!

How to make mini tacos

Place the ground beef bacon mixture onto the corn tortilla chips then top with the chopped red onion, jalapeño, avocado cream sauce and a sprig of fresh parsley.

Ingredients

  • 1 lb ground beef

Ingredients

  • 2 cups cooked & shredded chicken breast
  • 1/2 cup buffalo sauce
  • 1 loaf french bread (cut into 12 slices)
  • 12 slices pepper jack cheese
  • 6 tbsp butter

Begin by combining the shredded chicken and buffalo sauce, next spread 1/2 tablespoon of butter on each slice of bread.

Flip the bread over and top each piece with a slice of pepper jack cheese.

Since I’ve put Buffalo Chicken in virtually everything else, I figured it was about time I put it in a taco 😉

I also just received these adorable and amazingly practical Longaberger Taco Holders in the mail, I mean seriously, how cute are these? And they keep all that yummy buffalo chicken right in your taco instead of falling out on a plate!

Gluten Free Buffalo Chicken Tacos

Spicy Buffalo Chicken Tacos

Instead of using blue cheese traditionally served with buffalo chicken, I kicked these babies up a notch with some pepper jack cheese, then added a cool cilantro lime dip on top!

The result was one seriously delicious taco!

Buffalo Chicken Taco Ingredients

Ingredients

  • 2 chicken breasts (app 1 lb)
  • 1 tsp olive oil
  • 1 jalapeño (de-seeded and diced)
  • 1/2 red onion (diced)
  • 1/2 cup buffalo sauce
  • 8 small corn or flour tortillas (corn for gluten-free)
  • 1 cup pepper jack cheese (shredded)
  • 1 cup cilantro lime dip (click link for recipe)
  • 1/4 cup fresh cilantro
  • 1 lime (sliced into 8 small wedges)

Begin by pressure cooking or boiling the 2 chicken breasts.  Once cooked through, shred the chicken with a knife and fork.

Next, add the olive oil to a large skillet over medium heat. Once heated, add the jalapeño and onion.

Sauté for 5-7 minutes, then add the shredded chicken and buffalo sauce, mix together, turn the heat to low and cook for 3-4 minutes.

Add the chicken mixture to the tortillas, then top with pepper jack cheese, cilantro lime dip, fresh cilantro and one lime wedge to squeeze over the taco.

For the third and final dish of my low-sodium series for the San Diego 6 Morning Show, I chose to make my famous tomato basil bruschetta recipe. I skipped the cheese and replaced the baguette it’s traditionally served on for fillo baskets!

One small slice of a baguette can cost you almost 400 mg of sodium, where as one fillo basket has only 10 mg, talk about a super swap!

Ingredients

  • 4 roma tomatoes (chopped)
  • 1/2 red onion (chopped)
  • 3 cloves garlic (minced)
  • 1 tbsp fresh basil (chopped)
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1/4 tsp black pepper
  • 15 fillo baskets

Combine the first 7 ingredients in a small bowl.

Spoon the bruschetta into the fillo baskets and serve.

Nutella Cheesecake Bites

The inspiration for this dessert came last week while studying for finals. I was rummaging through my cabinets looking for a sweet snack and stumbled upon the vanilla wafers I had purchased to dip in my Birthday Cake Hummus. Then I spied that little jar of hazelnut goodness sitting on the shelf above. My vanilla wafers all the sudden started screaming, “dip me in hazelnut goodness, dip me in hazelnut goodness”, and since talking cookies freak me out, I obeyed.

Pretty much the greatest combination ever.

Now I thought, I could just spread some nutella on vanilla wafers and serve them at my Christmas Cocktail Party, but that just wasn’t quite inventive enough for the little leopard book, so I whipped some cream cheese into the nutella and replaced a graham cracker crust with vanilla wafers to make mini-nutella cheesecake bites!

As I prepared these little bite-sized desserts for my party, I had to make a separate plate for my roommate and I to snack on so that we didn’t eat all of the bites reserved for the guests before the party!

Ingredients

  • 16 oz cream cheese
  • 1 cup nutella
  • ½ cup powdered sugar
  • ¼ cup milk
  • 1 tbsp vanilla
  • 1 box vanilla wafers

Blend together the nutella and cream cheese. Next, mix in the powdered sugar, milk and vanilla.

Place the Nutella cheesecake mixture into a Ziploc bag and cut a small hole in the corner.

Optional: top with some chocolate shavings for a little extra “oomph!”

Lemon Rosemary Basil Chicken

Ingredients

  • 1 lemon (zested and juiced)
  • 2 tbsp olive oil
  • 3 cloves garlic
  • 1 tsp steak seasoning
  • 1 tbsp fresh basil (chopped)
  • 1 tbsp fresh rosemary (chopped)
  • 2 lbs chicken

Begin by zesting one large lemon, then slicing the lemon open and squeezing the juice into a medium bowl. Next, add the olive oil and crushed garlic to the zest and juice.

Next, add the steak seasoning, basil and rosemary.  Combine well.

White Chocolate Raspberry Phyllo Rolls

White Chocolate Raspberry Phyllo Rolls

Last week I took a night off from cooking dinner and was treated to a delicious meal at my friend Crystals house. Of course I couldn’t show up empty-handed so I offered to bring dessert!

I had phyllo dough in my fridge and white chocolate chips in my pantry so I decided to bring them together with tart raspberries.

White chocolate and raspberry are a perfect combination in this delicious dessert pastry.  Flakey phyllo dough encompasses the tasty pair for sweet perfection.

Raspberry White Chocolate Fillo Roll Ingredients

Prep Time: 10 minutes
Cook Time: 10 minutes

Ingredients (makes 10 phyllo rolls)

  • 1 cup raspberries
  • 1 tsp cornstarch
  • ½ tsp lemon juice
  • ¼ cup sugar
  • 10 sheets phyllo dough
  • olive oil cooking spray
  • 1/3 cup white chocolate chips

Start by combining the raspberries, cornstarch, lemon juice and sugar in a small bowl.

Lay out the phyllo dough and spray the top sheet with cooking spray.

Start from the top and fold the phyllo dough in half.

Next, place the raspberries 1 inch from the edge.

Place the white chocolate chips on top.

Next, fold in the sides of the phyllo dough.

How to roll phyllo dough

Then roll the dough into a cylinder shape and spray the top with cooking spray. Repeat the above steps 9 times.

Place the phyllo rolls in a 400° oven for 10-12 minutes.

Tiramisu Tart

This recipe was inspired by my original plan to make a layered Tiramisu dip for my Housewarming Party.  That never happened. I’ve learned after throwing dozens upon dozens of parties that sometimes I just have to throw in the towel on a couple planned menu items. Sometimes it all comes together and sometimes it doesn’t.

I always start with the party “must haves” and then leave the rest up to fate. As fate would have it, the Tiramisu dip was not made, but two days later this delicious Tiramisu Tart came into my life!

I knew I had to use the Mascarpone and Ricotta Cheese before they went bad but I scratched my original dip recipe. I felt like a dip was more party dessert then “have a slice after work/school” kind of dessert. I decided on a Tart simply because I had an unused Longaberger tart dish sitting on a shelf begging to be used!  I had originally planned to use Ginger Snap cookies for dipping, so I simply ground them up in my food processor and made them into the crust, then filled it with the dip. This made for a great evening treat all week!

Ingredients

  • 1 1/2 cups ginger snap crumbs
  • 4 tbsp butter (melted)
  • 1/4 cup sugar
  • 1 cup mascarpone cheese
  • 1 cup ricotta cheese
  • 1/2 cup sour cream
  • 1/2 cup brown sugar
  • 1/4 cup coffee syrup
  • 2 tbsp marsala wine
  • 1 tsbp cocoa powder
  • 2 tbsp chocolate shavings

Start making the crust by combining the ginger snap crumbs, butter and sugar in a small mixing bowl. Next, press the mixture into a tart pan.

Start the filling by creaming together the mascarpone, ricotta and sour cream.

Torani Syrups can be purchased a lot of places such as World Market or Smart and Final.

If you prefer not to use the syrup, you can replace it with 2 shots of espresso.

These little “parties on a stick” first came into my world at Cafe Sevilla in San Diego.  I became beyond obsessed with them and started making them for every party, event, Monday, you know, whatever!

Blue Cheese Stuffed Bacon Wrapped Dates

The kicker with these is, my Mom loves them!  When the certified pickiest eater in the world likes something, you know it’s good!  I’ve started making them every time I go home for a family event. They are quick, easy and make a great appetizer or party dish!

Bacon Wrapped Date Ingredients

Ingredients (makes 20 dates)

  • 20 dates
  • 10 slices bacon
  • 4 oz blue cheese

Preheat the oven to 375°.

Slice half way through the dates and remove the pits, then add the blue cheese.

Slice the bacon in half then wrap a 1/2 slice around the date.

Next, slide a toothpick through to secure the bacon.

Repeat 19 times.

Place in the oven for 20 minutes, turn the dates over then continue to cook 10-15 minutes or until bacon is crispy.

Blue Cheese Bacon Wrapped Dates

Depending on the event (and how many new recipes I’m trying to conquer that day!) when I have time I add an Apple Cider glaze on top.

Apple Cider Glaze Recipe

Ingredients

  • 1/4 cup butter (apple butter preferred)
  • 3 tbsp brown sugar
  • 3 tbsp granulated sugar
  • 6 tbsp apple cider
  • 2 tbsp half and half
  • 2 tbsp honey
  • 1 tbsp cider vinegar
  • 1 sprig fresh thyme

Start by melting the butter in a small saucepan, next combine the additional ingredients and whisk well.  Bring to a boil. Reduce heat and simmer for 5 minutes, stirring consistently. Remove from the heat and let stand 3 minutes.

Use a pastry brush to glaze the dates 3-5 minutes before removing them from the oven.
