Sometimes the best dinners are the un-planned ones, the ones that come in times of  “staring in the refrigerator panic”!

Italian Style Meatloaf

My plans to make dinner for my friend Evelyn and I on Monday night went awry when I realized the chicken I was going to use to make stuffed chicken had gone bad!

Never fear, the Little Leopard Book fridge was fully stocked so there had to be something in there I could make! I had a pound of extra ground beef left over from the Loaded Calzone I made the night before, extra homemade tomato basil marinara and plenty of Italian cheeses, so Italian Meatloaf it was!

Italian Meatloaf Ingredients

Ingredients

  • 1/2 red onion (diced)
  • 1 red bell pepper (diced)
  • 2 cloves garlic (minced)
  • 1 lb ground beef
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • 1 tbsp fresh basil (chopped)
  • 1/2 cup ricotta cheese
  • 1/4 cup parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 cup Tomato Basil Marinara Sauce

Preheat the oven to 375°.

Place the first 10 ingredients in a large mixing bowl.

Mix to combine then press into a loaf pan.

Bake for 25 minutes. Remove the meatloaf from the oven, drain any juices and spread the marinara sauce onto the meatloaf.

Return to the oven and bake for an additional 15 minutes.

Slice and serve!  I gobbled this dish up with an extra side of homemade marinara for dipping… because it’s just that good!

♣ Vegetarian Option: Substitute a sleeve of veggie crumbles for the ground beef.

♦ Gluten Free Option:  Use gluten-free breadcrumbs to make this dish gluten-free.

Cook Time: 35 minutes

After eating a delicious Baked Ziti dish on a Progressive Dinner, my friend and fellow Buffalo Chicken addict, PK, suggested that I make a Buffalo Chicken Baked Ziti.

I was obviously on board with this idea and a couple weeks later, Buffalo Chicken Baked Pasta was created!

I re-named it “baked pasta” instead of “baked ziti” because sometimes ziti is not available, like at Trader Joes, where I was purchasing my pasta for this dish 😉

Buffalo Chicken Baked Rigatoni Ingredients

Ingredients

  • 1 lb chicken breasts (boneless, skinless)
  • 1 lb pasta (ziti, rigatoni or penne)
  • 1 cup mozzarella cheese (shredded)
  • 1 cup buffalo sauce
  • 1 cup ricotta cheese
  • 1/4 cup blue cheese dressing
  • 1/4 cup parmesan cheese
  • 1/4 cup breadcrumbs

Begin by pressure cooking or boiling the chicken breasts and cooking the pasta.

Next, shred the chicken breasts, then combine the shredded chicken, cooked pasta, mozzarella, buffalo sauce, ricotta cheese and blue cheese dressing.

Mix all of the ingredients together then pour into an oven safe baking dish.

Next, combine the parmesan cheese and breadcrumbs.  I also added a little Italian seasoning.  Totally optional, but gives it a little extra flavor!

Sprinkle the mixture on top of the pasta dish.

Bake at 350° for 25 minutes, then turn the broiler on to high and brown up the crust for 3-5 minutes.

Garnish with diced green onions if you would like!

I’m all about a little extra kick, so I sprinkled some crushed red pepper on top as well!

I don’t think I need to re-iterate my love for buffalo chicken, but just in case, I love it! And this recipe is so quick and easy to make, there is no excuse not to enjoy it yourself!

On Sunday I used the pressure cooker to cook 3 chicken breasts, I then shredded the chicken and placed it in a plastic storage container in the fridge.  By doing this I was able to make the wrap for lunch in 5 minutes and enjoy all its buffalo amazingness!

Ingredients (serves 1)

  • 1 large flour tortilla
  • 2 tbsp blue cheese dressing
  • 1/4 cup spinach
  • 1 cup chicken breast (cooked and shredded)
  • 2 tbsp buffalo sauce
  • 1/4 cup carrots (shredded)
  • 1/4 red onion (thinly sliced)
  • 1 tbsp blue cheese crumbles

Start by pouring the blue cheese dressing in the center of a tortilla.

Next, add the spinach on top of the blue cheese dressing.

Now mix the shredded chicken with the buffalo sauce.

Add the buffalo chicken to the wrap.

Next, top with the sliced onions, shredded carrot and blue cheese crumbles.

Now you’re ready to wrap! Begin by folding in the sides.

Then wrap the tortilla tightly around the filling, slice in half and dig in!

Writing this post makes me want another one right now!  Good thing I have that extra chicken in the fridge 😉

You could even slice the wrap into quarters and serve them as appetizers at a party!
