Chipotle Pulled Pork Dip

I spent last week reflecting back on 2013. Part of this reflection was upon the most popular recipes on Little Leopard Book last year. What recipes did people love, what caught the attention of websites like Buzzfeed, Yahoo and Huffington Post, and I started to think back on publishing my premiere cookbook “Buffalo Style“.

The entire concept of the book came from the popularity of my recipes on Little Leopard Book that included buffalo sauce as an ingredient, including my first ever “Buffalo Style” recipe, Buffalo Chicken Dip.

Buffalo Pickle Chips

Buffalo Pickle Chips {Little Leopard Book}

What can I say about a fried pickle, it’s battered, it’s deep fried, it’s crunchy, salty and delicious! Unfortunately for those of us watching our fried food intake, this sort of treat may be off the radar… until now that is!

Buffalo Pickle Chips

My version of this oh-so-scrumptious southern favorite is spicy, gluten-free and baked instead of fried, giving it a little more flavor with a lot less fat!

Buffalo Baked Pickle Chip Ingredients

Ingredients

  • 1 jar (25 oz) dill pickle chips
  • 2 eggs
  • ¼ cup buffalo sauce
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp pepper
  • ½ tsp crushed red pepper
  • 4 cups rice chex
  • ¼ cup blue cheese dressing (for dipping)

Begin by draining the juice from the pickles.  Next, whisk together the eggs and buffalo sauce in a shallow bowl.

Buffalo Sauce

Then place the rice chex, garlic powder, paprika, black and red pepper in a food processor.

Spicy Rice Chex Mixture

Combine until a fine crumb mixture forms then place in another shallow bowl.

Now it’s time to set up the “pickle makin’ station”.

How to Make Buffalo Pickle Chips

First soak the pickle chips in the buffalo egg mixture, then toss them in the seasoned rice chex.

Next, place them on a wire rack on top of a baking sheet.

Baked Buffalo Pickle Chips

Broil on high on the middle shelf of the oven for 10 minutes.

Gluten Free Pickle Chips

Serve with a side of blue cheese dressing for dipping!

Gameday Grub

Saturday I had the great honor of hosting more than 20 Oklahoma peeps at my house in LA for the OU vs Florida State game!!!  In case you live under a rock (or aren’t a football fan) OU was victorious 23-13 and celebration was not lacking at my house!

Beverages were spilled, cheerleading uniforms were worn, country music was played and best of all… food was eaten!  Now there are upsides and downsides of being a food blogger!

Upsides: people come to me for recipe ideas (I love giving advice!) and I get to come up with new recipes to put on LLB. Downsides: I put a lot of pressure on myself to come up with an amazing menu for every event or dinner and I must execute it to perfection!

On Thursday I began my search for the perfect menu for Saturday. Trying to feed that many hungry Sooner fans with delicious, amazing food that can be prepared before game time… a little tricky! My food is important, but there was no way I was missing one minute of this game!  So here it is, the perfect “Gameday Grub” menu:
