When I was home over the holidays, my Dad was making cheese dip (Velvetta + Rotel, an Oklahoma staple when eating Tex-Mex!), he reached in the refrigerator to grab a tupperware container of rotel and he accidentally grabbed the tupperware of leftover bruschetta.

He realized before he actually added it to the bowl of Velvetta, but then I got an idea, what if I made an Italian version of “cheese dip” with bruschetta instead of Rotel and a combination of cream cheese and mozzarella instead of Velvetta?!

If you’ve been wondering where the new posts¬†have been for the past week, they were on hold while I took a trip to the east coast.

I started off my trip to New York & Washington DC hosting a Satellite Media Tour with PLUS Media all about Friendsgiving. You can check out several of the segments online at the following links:

Following the media tour, I ventured into New York City to check out some of the best spots to eat in the city. I’m currently compiling all of my favorites into an NYC City Guide that I’ll be sharing in the next couple of weeks on the blog! In the meantime you can check out my Instagram page to see a sneak peak of where all I was eating while in the city!

After leaving NYC, I headed down to Washington DC to eat my way through yet another city! I’ll also be sharing a Washington DC city guide soon with all of my favorite spots to eat in the nations capitol.

I’m now on a plane back to home sweet sunny San Diego. As soon as I arrive home I’ll be heading straight into the kitchen! I have so many awesome recipe ideas that I can’t wait to create, then share with you all for Thanksgiving, Friendsgiving & Thanksgiving leftovers!

Man oh man, the last week of my life has been completely crazy! I got called up to LA by my manager at CMEG to meet with a major network about hosting a new show! I know, right? So freaking awesome!

I took a whirlwind 24 hour trip to LA, met with the network and took the opportunity while I was in town to see some friends. I headed back home to San Diego on Friday morning and back to work.

I did a little work over the weekend and watched some football then woke up this morning and headed to my former college, SDSU, to guest lecture in¬†JMS210: Social Media in Journalism. A class that just started it’s third year on campus. ¬†It’s amazing that this is now a college course!

When I first purchased my Spiralizer, I went to the grocery store, perusing the produce section for anything and everything I could potentially spiralizer. One of the items that I found was jicama. 

Jicama, also known as a “Mexican Yam” is a vegetable traditionally from Mexico and Central America. ¬†It’s a slightly sweet, starchy vegetable that resembles the consistency of a pear or apple. ¬†It’s high in dietary fiber and Vitamin C making it a healthy addition to your diet!

Flatbread is the thin and crispy sibling of pizza that is perfect for topping with a number of delicious ingredients!  I made this homemade basil flatbread as the base for my Grilled Peach Flatbread with Goat Cheese and Balsamic Reduction. The result was crisp perfection!

Instead of ingredients or recipes, some days I simply head to the grocery store with a list of ideas like “balsamic peaches, chocolate bacon donuts, pizza with goat cheese,¬†creamy avocado dressing and grilled flatbread.” ¬†Sometimes each item in the list becomes its own dish, sometimes they go together!

I decided that “chocolate bacon donuts” could pretty much stand on their own and “creamy avocado dressing” would go on a delicious new salad, but I thought the “balsamic peaches, pizza with goat cheese and grilled flatbread” could all be combined into a sweet, salty and scrumptious new recipe. That is when this dish was born!

Vegetables in Ancho Chili Dipping Sauce

The Veggies with Ancho Chili Sauce paired perfectly with the Mini Tacos and Jicama Chips with Mango Salsa that were also served at the party. Altogether, Chef Fernanda put together a delicious spread of hors d’oeuvres! If you want to try more of her delectable creations, stop by Bailiwick for brunch on Saturday or Sunday!

I re-created Fernanda’s dish at home so I could share the recipe with all of you!

Grilled Vegetables with Ancho Chili Sauce Ingredients

Ingredients

  • 4 dried ancho chilies
  • 2 habanero peppers
  • 1 tbsp sriracha
  • 1 cup ketchup
  • 1 tsp paprika
  • 1 tsp kosher salt
  • ¬Ĺ tsp ground black pepper
  • 1 cup sour cream
  • 1 cup ancho chili water
  • 4-6 carrots (cut into matchsticks)
  • 2 zucchinis (cut into matchsticks)
  • 1 cup heirloom cherry tomatoes

Begin by slicing off the tops of the ancho chilies and removing the seeds. Next, tear the ancho chilies in large strips.

Ancho Chilies

Boil a small pot of water, then add the ancho chili strips and remove the water from the heat.

Cooking with Ancho Chilies

Allow the chilies to soak in the water for 20-30 minutes.

In the meantime roast the habaneros and grill the carrots and zucchini over medium heat. The carrots should grill for 15-20 minutes, while the zucchini only needs 10-15 minutes on the grill.

Grilled Vegetable Recipe

Once the ancho chilies are soaked and the habaneros are roasted, remove the ancho chilies from the water, reserving the soaking water.

Ancho Chili Sauce Recipe

Peel and de-seed the habaneros, then add both chili peppers to a blender with the sriracha, ketchup, paprika, salt and pepper.

Blend for 15-20 seconds.

Ancho Chili Sauce Recipe

Add the sour cream and 1 cup of the reserved ancho chili water. Blend well.

At this time, the carrots and zucchini should be all grilled up. Prepare the tomatoes by skewering them on a toothpick.

Grilled Vegetables for Dipping

Pour the ancho chili sauce in small cups or ramekins, then place the vegetables in the cups.

These are great for tray passed hors d’oeuvres or individual appetizers.

You could also serve a large bowl of the ancho chili sauce with a veggie tray, did someone say football watch party, labor day BBQ? Oh yes!

Today is the day Little Leopard Book turns 2! ¬†I’m so excited to toast champagne, chow down on delicious hors d’oeuvres and¬†take pictures with fun photo props!

Chef Fernanda has created some delicious and refreshing treats for the party, including the Mini Tacos I shared on Tuesday and these light jicama chips with mango salsa!

I re-created this dish at home as a great appetizer for dinner last night! Check out this how-to video then get the full recipe below:

Jicama Chips with Mango Salsa Ingredients

Ingredients

  • 2 cups mango salsa
  • 1 medium jicama (sliced into chips)
  • 2 tbsp sriracha
  • 2 tbsp fresh cilantro

Begin by peeling and slicing a medium size jicama into app. 24 “chips”. ¬†I used a small pastry cutter to get perfectly round chips ūüôā

Put a small dollop of sriracha in the middle of each jicama chip.

Top with the mango salsa.

Garnish with fresh cilantro (or other fresh herb).  I used the last of my cilantro leaves in the mango salsa so I placed a sprig of Italian Parsley on top as a garnish.

Jicama Chips with Mango Salsa

Ingredients

  • 2 cups mango salsa
  • 1 medium jicama (sliced into chips)
  • 2 tbsp sriracha
  • 2 tbsp fresh cilantro

Instructions

  1. Begin by peeling and slicing a medium size jicama into app. 24 ‚Äúchips‚ÄĚ.
  2. Put a small dollop of sriracha in the middle of each jicama chip.
  3. Top with the mango salsa.
  4. Garnish with fresh cilantro.

Gluten Free Chipotle Alfredo Pasta

After a long and crazy week of shooting my upcoming web series, “Cooking Secrets of a Single Girl” I’m so excited to share a new recipe with all of you!

Spicy Mexican Pasta Alfredo

Creamy chipotle alfredo is tossed with corn pasta and topped with fresh cilantro and cotija cheese. This pasta dish is gluten free, vegetarian and more Mexican than Italian!

Mexican Corn Pasta with Chipotle Alfredo Ingredients

Ingredients

  • 4 tbsp butter
  • 2 cloves garlic (minced)
  • ¬Ĺ¬†cup milk
  • 1 cup greek yogurt
  • ¬ľ cup parmesan cheese
  • ¬Ĺ tsp sea salt
  • 1 tsp cumin
  • 2 tsp ground chipotle pepper
  • 1 lime (zested and juiced)
  • 8 oz corn spaghetti
  • 2 tbsp fresh cilantro (chopped)
  • 2 tbsp cotija cheese
  • ¬Ĺ¬†tsp red pepper flakes

Begin my melting the butter in a medium saucepan over medium-high heat. Add the garlic and sauté for 1 minute.

Add the milk and greek yogurt, whisk well, then add the parmesan.

Add the sea salt, cumin and chipotle pepper, then zest and juice the lime into the sauce.

Consistently whisk for 1-2 minutes. Reduce the heat to low and simmer 4-5 minutes.

Meanwhile, boil water and cook the pasta according to package directions.

Add the pasta to the alfredo sauce and toss.

Place in a serving bowl and top with fresh cilantro, cotija cheese and red pepper flakes.

This salsa is so easy to make and is perfect atop fish, chicken, tacos or served with chips for dipping!

  • 1 mango (diced)

  • 1 jalape√Īo (de-seeded and minced)

This recipe came from my insane obsession with not wasting food!

Over the years this has become a problem that has led to some of my favorite recipe creations of all time; see: Mexican Meatloaf, Buffalo Chicken Phyllo Rolls and Caramelized Beet and Feta Cheese Salad.

All of these recipes were born out of a combination of ingredients which I had in my refrigerator that needed to be used!

Tomato Herb Cheddar Skillet Bread Pudding

This weekend was my roommate Ryan’s last in the house. He moved to LA yesterday to pursue a new career. We threw a “BYOM” BBQ… which stands for “Bring Your Own Meat”. ¬†Basically, myself, Ryan and his girlfriend made the sides, sangria and dessert, while everyone else brought something to throw on the BBQ!

The moral of this story is, we told everyone that we’d have the sides to go with burgers, hot dogs, etc. including ketchup, mustard, buns and so on.

Needless to say, this memo got lost somewhere and we ended up with 4 packages of unopened hot dog and hamburger buns after the party! Point being, the hot dog buns were turned into this delicious new recipe!

Tomato Herb Cheddar Bread Pudding Ingredients

Ingredients

  • 3 cups leftover bread or buns (cubed)
  • 3 eggs (whisked)
  • 1 cup milk
  • ¬Ĺ tsp black pepper
  • 1 tbsp fresh basil (minced)
  • 1 tbsp fresh rosemary (minced)
  • 1 tbsp fresh Italian parsley (minced)
  • 1 tbsp green onions (minced)
  • 4 cloves garlic (crushed)
  • 1 cup grape tomatoes
  • 1 cup cheddar cheese

Preheat the oven to 375¬įF.

Whisk the eggs, milk, pepper, basil, rosemary, parsley, green onions and garlic together in a small bowl.

Place the bread in a large skillet or baking dish and pour the mixture over the bread.

Toss lightly until all of the bread is coated then top with the tomatoes.

Vegan Roasted Green Bean Pesto Salad

This Paleo salad recipe is full of rich flavors and would be perfect served with any of our Paleo main dishes, such as Roasted Balsamic Pork Tenderloin, Lemon Herb Salmon or Herb Crusted Turkey Breast!

Roasted Green Bean Salad Ingredients

Ingredients

  • 1 lb green beans
  • 1 cup grape tomatoes
  • 4 garlic cloves
  • 1 red bell pepper (diced)
  • 1/4 cup balsamic vinegar
  • 1/4 cup¬†olive oil
  • 1/2 tsp black pepper
  • 1 tbsp fresh basil (chiffonade)
  • 1/4 cup¬†Walnut Sage Pesto (click link for recipe)
  • 1/3 cup walnuts

Preheat the oven to 400¬į.

Begin by trimming the ends off the green beans, chopping them into 1 inch pieces and adding them to a large mixing bowl.

Add the tomatoes, bell peppers and garlic cloves to the bowl then drizzle with the balsamic vinegar, olive oil and top with the black pepper.

Toss together then place onto a rimmed baking sheet lined with foil or parchment paper.

Top with the fresh basil and place into the oven for 25-30 minutes.

My recommendation: grab the sides of the parchment paper or foil (like this ‚Üď) and simply slide it into the bowl so you make sure to get all the roasted vegetables and the delicious balsamic juices into the bowl.

This is the first in a series of upcoming sandwich recipes I’ll be posting in conjunction with Mezzetta’s “Make That Sandwich” Contest.

Gluten Free Grilled Portobello Mushroom Sandwich

The lovely folks over at Mezzetta reached out to me about entering the contest a couple of weeks ago. I was very excited when I received their e-mail because I’ve been using their products for years and love their pepperoncini’s, olives and sliced jalape√Īos! I then found out that there was a $25,000 prize for the winner. Let me tell you, being a full time food blogger, the thought of winning $25,000 sounds pretty amazing right now!

I immediately started brainstorming and came up with a different sandwich for each of their categories: hot, cold and vegetarian.  This is my vegetarian sandwich!

Grilled Portobello Caprese Sandwich

While I usually love a couple slices of delicious bread to hold my sandwich together, I decided to go totally vegetarian and totally gluten free with this Portobello Caprese Sandwich.

Two hearty portobello mushrooms filled with fresh mozzarella, Mezzetta Sun-Ripened Dried Tomato Pesto and loads of other delicious flavors make this is a unique sandwich not to be missed!

Portobello Caprese Sandwich Ingredients

Ingredients

  • 2 large portobello mushrooms
  • 2 tbsp Mezzetta Sun-Ripened Dried Tomato Pesto
  • 1 tsp¬†Mezzetta Crushed Garlic
  • 1/2 cup fresh mozzarella cheese (sliced)
  • 1/2 roma tomato (sliced)
  • 4-6 large fresh basil leaves
  • 1/4 cup¬†Mezzetta Sliced Peperoncini’s
  • 1/2 cup Mezzetta Roasted Bell Peppers
  • olive oil cooking spray

Turn heat on the grill to medium or preheat the oven to 400¬į.

Begin by cleaning out the inside of the mushrooms with a spoon.  During this process, try not to break the sides of the mushroom. (You want to be sure and keep all those delicious goodies inside the sandwich during the grilling process!)

Place 1 tbsp of pesto and 1/2 tsp of crushed garlic onto each mushroom.

Top each portobello with a large slice of mozzarella.

Then add the basil.

On the other mushroom, top with the peperoncini’s.

Carefully put the two sides together.

Spray the grill with cooking spray then place the sandwich onto the grill for 20 minutes, flipping carefully half way through.

If a grill is not available, you can also place the sandwich into the oven on a rimmed baking sheet for 20 minutes or until the mozzarella is melted.

  • ¬ľ tsp black pepper
  • 2 tbsp fresh basil (chopped)
  • 1/2 baguette (sliced)
  • ¬ľ cup ricotta cheese
  • ¬ľ cup arugula

Preheat the oven to 400¬į. ¬†Place the tomatoes and garlic on a baking sheet covered with foil bent into a basket shape. ¬†Drizzle with the olive oil and vinegar, then top with the black pepper and fresh basil.

Roasted Tomato and Garlic Bruschetta Recipe

Place into the oven for 25 minutes.

While the tomatoes are roasting, place the baguette in the oven for 3-5 minutes.

Remove from the oven and slice. Spread ricotta cheese on top of each slice of baguette.
