Breakfast is not only the most important meal of the day, it also happens to be my favorite meal of the day!
The problem is, I don’t always make time to cook and eat breakfast every day.
You too? That’s kind of what I thought, so today I’m sharing a breakfast recipe that is so quick and easy to whip up, you’ll have no excuse for skipping the most important meal of the day!
I partnered up with my friends at Jennie-O to create this gluten free, protein packed, Italian Turkey & Egg Breakfast Skillet Recipe.
With flavorful Jennie-O Breakfast Sausage as the base of the recipe, you know it’s going to be delicious, add fresh veggies, pesto and eggs, and you’ve got yourself one scrumptious start to the day!
- 1 tbsp olive oil
- ½ cup onion (diced)
- 3 cloves garlic (minced)
- 1 lb Jennie-O Mild Turkey Breakfast Sausage
- 2 cups diced tomatoes
- ¼ cup basil pesto
- 6 large eggs
- ¼ cup parmesan cheese (grated)
Add the olive oil to a skillet over medium heat. Add the onion, saute 4-5 minutes, add the garlic, saute for an additional minute. Add the Jennie-O turkey sausage and cook through, 6-8 minutes.
Add the diced tomatoes and basil pesto, mix everything together.
Crack the eggs on top.
Cover and cook 6-8 minutes. Remove the lid, sprinkle with cheese and serve.
Keep it healthy, low carb and gluten free by digging into just the tasty breakfast skillet, or serve it with a side of toast to dip up all that egg yolk goodness!
