Grilled Cajun Chicken with Bell Pepper Cajun Slaw

To make the worlds most delicious cajun chicken marinade, you simply whisk together olive oil, lemon juice, apple cider vinegar, hot sauce and seasonings. For this recipe, you’ll use half of the marinade for the chicken and half as a dressing for the bell pepper slaw.

After making the marinade, all that’s left to do is marinate and grill the chicken and toss together the slaw. Easy to make and great for meal-prepping!

Kitchen Tools Used To Make This Recipe

  • Indoor Grill: this is one of my favorite small kitchen appliances that I use year-round! It’s great for winter months when it’s too cold to grill outside, or when you just want to grill something quickly in your kitchen.
  • Grill Pan: if you don’t have an indoor or outdoor grill handy, you can also use a grill pan on the stove to grill the chicken.

  • 1 tbsp apple cider vinegar
  • 1 tbsp Tabasco hot sauce
  • 1 tbsp Old Bay seasoning
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp red pepper flakes
  • ½ tsp kosher salt
  • ½ tsp ground black pepper
  • 2 chicken breasts
  • 1 tbsp stone ground mustard
  • ½ cup celery diced
  • ½ cup carrots shredded
  • 1 cup bell pepper thinly sliced

Instructions

  1. Combine the ¼ cup olive oil, lemon juice, apple cider vinegar, hot sauce, Old Bay seasoning, oregano, thyme, red pepper flakes, salt and pepper in a medium bowl to create the marinade and slaw dressing.

  2. Pour half of the marinade (app ¼ cup) into a large plastic bag with the chicken.

  3. Toss to coat and place in the refrigerator to marinate for up to 8 hours, I would recommend at least 30 minutes.

  4. Combine the remainder of the marinade with the remaining 1 tbsp olive oil and 1 tbsp stone ground mustard to create the slaw dressing and set aside.

  5. In a large bowl, combine the celery, carrots and bell pepper, pour the slaw dressing into the bowl and toss to combine. Place in the refrigerator until ready to serve.

  6. Remove the chicken from the marinade and place on a grill over medium heat for 10-12 minutes per side.
