You know when you’re about to leave on vacation and you pretty much have no ambition to do anything except for leave on vacation?
Me. Right now.
I’m heading to Arizona tonight for a mini-vaca to celebrate a friends birthday and Halloween. I love my weekends in AZ because I get to see great friends, relax and most importantly, eat Jimmy & Joes Pizza.
If you live in the Phoenix area and haven’t been yet, run, don’t walk to JJP and get a serious slice. If you’re there this weekend you’ll probably see me. I’ll be the little girl, hiding in the corner surrounded by pizza and boneless wings!

It’s been 6 weeks since I started going to the gym on a daily basis (sometimes even two-a-days!) I’m just wondering why I don’t have JLo’s abs yet? Um, what’s up? Maybe it has something to do with my obsession with tacos, cheese and delicious craft beers during football games! 😉
Let’s be honest, I work out, so that I can continue to enjoy these delicious treats of life and keep a somewhat JLo-esque figure!
While I’m not willing to give up my favorite foods, such as tacos, I am willing to make them a little healthier, and that’s where I came up with this idea for chicken tacos in lettuce wraps.
All of the delicious taco filling without the extra carbs from the tortilla!

This dish is dedicated to my Facebook friends.
A couple of weeks back as I was planning out new recipe ideas for October. I asked my Facebook friends which new recipe they would like to see on the blog and there was an overwhelming response for Red Pepper Chorizo Baked Mac and Cheese.
And I can’t say I blame them! It’s super flavorful cheesy pasta deliciousness, what’s not to love?

For my annual Super Bowl Party this year, I decided to make a taco bar with three different slow cooked meats & one slow cooker full of fajita veggies (for my vegetarian friends). This way people could make their own tacos anytime during the big game.

Is October “National Chili Month” because if it isn’t, I think it should be!
Ok, just verified, Food.com says National Chili Month is October 14th… um what? Wait, isn’t that a day, not a month? I’m a little confused, so I’m just going to use the powers vested in me (AKA my magical imaginary food blogging powers) to pronounce October, National Chili Month!
