I’m really not sure where the idea for this recipe came from. Maybe it stemmed from my growing obsession with chickpeas (see Greek Quinoa Salad, Roasted Beet Hummus, Zucchini Quinoa Burgers, I’ve basically been adding these babies to everything lately!) or my general love of tots, either way this is one healthy side dish that everyone will love!
I combined the chickpeas with Premium Gold Gluten Free Flour to keep these bite-sized treats healthy and gluten free. I then added a few spices and a little mascarpone cheese to bring everything together!
- 2 (15.5 oz) cans chickpeas (garbanzo beans)
- 2 cloves garlic
- 1 tsp kosher salt
- 1 tsp cumin
- ½ tsp black pepper
- ½ tsp onion powder
- 1 egg
- ¼ cup mascarpone cheese (or cream cheese)
- 1 cup Premium Gold Gluten Free Flour
Preheat oven to 400°.
Place all of the ingredients, except the flour, in a food processor.
Blend until smooth.
Transfer to a large bowl and hand mix in the flour.
Use your hands to “Roll and Squish” the mixture into tot shapes.
Place on a baking sheet.
Bake for 10-12 minutes, flip, then bake for an additional 10-15 minutes or until the edges start to brown.
Chickpeas don’t have a ton of flavor on their own, which means these tots need a little help from a dipping sauce to kick the flavor up a notch! I made a Chipotle Honey Ketchup to go on the side.
- ½ cup ketchup
- 1 tbsp honey
- 1 tsp chipotle powder
Whisk all of the ingredients together for the perfect sweet and spicy dipping sauce to accompany the chickpea tots.
You could also add different spices to the tots to infuse flavor directly into the recipe. I’m thinking a little of that chipotle powder in the chickpea tots would be fantastic!
