Gluten Free Baked Cinnamon Roll French Toast

This recipe combines two classic breakfast favorites, french toast and cinnamon rolls in a delicious and simple gluten free french toast casserole!

When you think about two of the most popular breakfast foods of all time, Cinnamon Rolls and French Toast, you probably don’t think gluten free!

But with the help of some delicious gluten free bread, I’ve not only combined the two delicious breakfast dishes, I’ve also made them gluten free!

Gluten Free French Toast Casserole

Layers of soft gluten free bread, with buttery cinnamon sugar filling, combined with a vanilla cinnamon french toast batter and topped with sweet, creamy icing. You really can’t go wrong with this new twist on two classic breakfast favorites!

Gluten Free French Toast Cinnamon Roll Ingredients

Ingredients

  • 1 loaf (12 slices) gluten free white bread
  • ½ tbsp + ½ tsp cinnamon (divided)
  • ¼ cup sugar
  • ¼ cup butter
  • 2 eggs (whisked)
  • ½ cup + 1 tbsp milk (divided)
  • 1 tsp vanilla extract
  • 1 cup powdered sugar

Preheat the oven to 375°F.

Slice the crusts from the bread, then roll the bread thin with a rolling pin.

Combine ½ tbsp cinnamon and the sugar in a small bowl.

Spread the butter onto the slices of bread, then sprinkle with the cinnamon and sugar.

Fold each slice of bread in half and place in a pie plate (or small baking dish).

Combine the eggs, ½ cup milk, ½ tsp cinnamon and vanilla in a small bowl.

Pour the mixture over the “cinnamon roll” bread, making sure all of the bread is covered.

Place in the oven and bake for 20-25 minutes.

Combine the powdered sugar and 1 tbsp milk. Drizzle over the baked cinnamon roll french toast.
