Today’s post will be the last of 2014, a fabulous year filled with lots of excitement for myself and the blog!
I’ve worked with so many great people this year on so many fun projects and so many delicious recipes, I’ve been featured on so many awesome sites and have met so many wonderful people via the blog and my social media channels!
Needless to say, I have so many things to be grateful for in 2014 and so many things to look forward to in 2015!
The final recipe of 2014 was a Christmas labor of love for my brother who has Celiac disease. I wanted to create a delicious breakfast recipe that the whole family could enjoy together on Christmas morning, thus Gluten Free Maple Bacon Pancakes were created!
These pancakes would also be great to whip up on New Years morning to start the year off on a delicious and gluten free note!
- 1 ¼ cups Premium Gold Gluten Free Flour
- 1 tbsp granulated sugar
- 2 tsp baking powder
- ½ tsp salt
- 1 large egg
- 2 cups milk
- 2 tbsp maple syrup
- 2 tbsp unsalted butter (melted)
- ½ cup bacon (cooked & crumbled)
Prepare the pancake batter by combining the gluten free flour, sugar, baking powder and salt in a small mixing bowl.
In a medium mixing bowl whisk the egg, milk and maple syrup together.
Add in the dry ingredients, stir to combine, then add the melted butter.
*Don’t be concerned if the batter looks a little thin, it’s supposed to!
Mix in the cooked, crumbled bacon.
Heat a griddle or large skillet to medium and spray lightly with cooking oil.
Pour the pancake batter by ¼ cup onto the griddle.
Wait for the pancakes to be covered with small bubbles, then flip.
Drizzle with additional maple syrup and serve.
