Two of my favorite things to toss on the grill, fruit and shrimp, are combined in this delicious skewer recipe!
I used Litehouse Raspberry Lime Vinaigrette to make a simple marinade for the shrimp then skewered them with fresh raspberries for extra color and flavor!
The Litehouse dressing made this dish easy to whip up in a matter of minutes while adding a little sweetness, a little tartness and a nice zest to the shrimp!
- ½ cup Litehouse Raspberry Lime Vinaigrette
- ½ tsp red pepper flakes
- 1 tbsp fresh cilantro (chopped)
- ½ lb shrimp (peeled & deveined)
- ½ cup fresh raspberries
- 2 limes (sliced into wedges) – optional garnish to squeeze over skewers
Add the raspberry lime dressing, red pepper flakes and cilantro to a medium bowl.
Add the shrimp and toss well to coat.
Place in the refrigerator for 15-20 minutes to marinate.
Skewer the shrimp with fresh raspberries.
Grill over medium heat for 2-3 minutes per side.
Serve with lime wedges for squeezing over the freshly grilled skewers.
