Raspberry Lime Shrimp Skewers

Two of my favorite things to toss on the grill, fruit and shrimp, are combined in this delicious skewer recipe!

Raspberry Lime Shrimp Skewers

I used a raspberry vinaigrette to make a simple marinade for the shrimp then skewered them with fresh raspberries for extra color and flavor!

The vinaigrette made this dish easy to whip up in a matter of minutes while adding a little sweetness, a little tartness and a nice zest to the shrimp!

Raspberry Lime Shrimp Skewers Ingredients

Ingredients

  • ½ cup raspberry lime vinaigrette dressing
  • ½ tsp red pepper flakes
  • 1 tbsp fresh cilantro (chopped)
  • ½ lb shrimp (peeled & deveined)
  • ½ cup fresh raspberries
  • 2 limes (sliced into wedges) – optional garnish to squeeze over skewers

Add the raspberry lime dressing, red pepper flakes and cilantro to a medium bowl.

Add the shrimp and toss well to coat.

Raspberry Lime Shrimp Skewers Recipe

Place in the refrigerator for 15-20 minutes to marinate.

Skewer the shrimp with fresh raspberries.

Raspberry Lime Shrimp Skewers Recipe

Grill over medium heat for 2-3 minutes per side.

Serve with lime wedges for squeezing over the freshly grilled skewers.

Ingredients

  • ½ cup raspberry lime vinaigrette
  • ½ tsp red pepper flakes
