Creamy Avocado Salsa

This amazing Creamy Avocado Salsa recipe is easy to make in just 5 minutes! It’s vegan, gluten free & perfect for tacos, grilled chicken, nachos or a delicious dip for chips!

I first made this salsa by accident in 2013. I literally added a bunch of stuff to a blender to make a quick salsa for tamales. This ended up being the best salsa ever!

This avocado salsa quickly became known by my friends as “awesome sauce”. I was constantly being asked if I had any “awesome sauce” when they would come to visit.

Needless to say, this awesome green sauce has been made dozens of times since 2013. And I’ve added it to all of my favorite Mexican food dishes! From tacos to nachos to enchiladas, this avocado dip is truly incredible on just about anything!

It is on the slightly spicy side, which I love! But if you don’t like spicy food, just take a look at the notes in the recipe card below. I’ll show you how to tone it down a bit… or a lot!

Think of it as creamy avocado salsa verde! Instead of tomatillos as the base, this salsa uses avocados as the base. But it still incorporates all of the delicious herbs and peppers, like in a salsa verde!

One of the best parts about this salsa, besides just how awesome it is, is that it’s made in just 5 minutes! Literally toss all of the ingredients in a blender and puree. Next thing you know, you have the best, most creamy avocado salsa EVER!

Do you love coffee, steak and salad? I know, it might sound like an interesting combination, but these are three of my favorite things and they come together SO PERFECTLY in this new recipe!

I took my ALL TIME FAVORITE steak rub that I originally used in this recipe for Coffee Crusted Tri Tip & rubbed it on a flank steak. A flank steak is the perfect cut of meat for a steak salad, as it’s lean, it cooks up quickly and can be thinly sliced.

I used Don Francisco’s French Roast Coffee to create the rub. The dark roast coffee paired perfectly with the brown sugar, fresh rosemary and fennel seeds in the rub.

For the salad, I started with a base of Ready Pac Food’s Spinach Spring Mix. This delicious blend of greens is packed with vitamins. It pairs wonderfully with the balsamic vinaigrette salad dressing and juicy, grilled steak on top.

To top off this scrumptious Steak Salad, I added crisp slices of red onions, bright, juicy cherry tomatoes, velvety avocado and creamy goat cheese. The fun thing about this hearty salad is that you can always make it your own by adding the toppings of your choice.

Crispy croutons, pecans or almonds can be added for a little crunch. And for an added sweetness, try pears, apples or strawberries on top!

One of the best parts about this dessert is that it’s frozen. So you can bust it out of the freezer and eat it as a cool, refreshing treat anytime! These cheesecake bars will stay good in the freezer for up to 2 months. You can easily make a double batch and have them on hand anytime you need a cold, sweet summer treat!

Crispy Baked Vegan Avocado Tacos

My love of tacos runs deep y’all! I’ve created many taco recipes over the years, including lots of meatless options for my vegan friends!

When it comes to tacos, meatless or not, you always need a great topping to finish them off. For these Avocado Tacos, I added Roasted Poblano Corn Salsa. This salsa is light, fresh and flavorful. A little drizzle of lime juice right on top and you’re good to go!

If you like your tacos on the spicier side, feel free to drizzle a little hot sauce right on top. We’re raving fans of Pico Pica in our house, so we drizzled  it right on top and used it to batter the avocado.

The crispy baked avocado is so easy to make. Simply dip avocado slices in your favorite hot sauce, then in a taco seasoned cereal coating. I’ve used both Rice Chex cereal and Corn Flakes to crust the avocado and both work great!

I toss the cereal right in my NutriBullet (any blender or food processor will work!) with Homemade Taco Seasoning and blend it into a fine crumb mixture. The combination of hot sauce and taco seasoned cereal crumbs gives these baked avocado strips so much flavor!

I was never a big fan of potato or pasta salads growing up. Blasphemy, I know! I’m not a big fan of mayonnaise, which is the base for a lot of potato and pasta salad dressings.

I also found a lot of pasta salads to be boring. They were lacking in that delicious kick of flavor I was looking for!

But today, I’m here to introduce you to THE SECRET ingredient for making a creamy, flavorful pasta salad dressing without mayonnaise. Avocado! That’s right, the creamy avocado dressing in this salad packs a serious punch of flavor and the texture is deliciously creamy.

Bonus, it’s so much healthier than a mayonnaise based dressing! And you only 6 ingredients to make it, two of which are salt and pepper! Simply add all of the ingredients to a blender and boom, you’ve got one tasty pasta salad dressing!

I love replacing mayonnaise with avocado on a BLT sandwich. So I decided to make a BLT Pasta Salad with my homemade avocado dressing. Who can deny the combination of crispy bacon, creamy avocado and juicy tomatoes?! I know I sure can’t!

One of the things that excites me so much about the new neighborhood we’ll be living in is that there’s a brand new Asian market just about 2 miles away and it’s huge! I decided to stop by a couple of weeks ago before heading over to the new house for a meeting with our contractor and pick up some red and green curry paste.

I used the red curry paste in this recipe for Slow Cooker Thai Peanut Chicken Noodles (seriously, so good!) and the green curry paste in this recipe for Avocado Curry!

Don’t worry though, if you don’t have an Asian market near you, you can still find red and green curry paste in the Asian section of your local grocery store, or you can order the same Green Currry Paste that I found at my local Asian market on Amazon.

Spiralized Jicama & Avocado Salad

Jicama Avocado Salad

When I first purchased my Spiralizer, I went to the grocery store, perusing the produce section for anything and everything I could potentially spiralizer. One of the items that I found was jicama.

Jicama, also known as a “Mexican Yam” is a vegetable traditionally from Mexico and Central America.  It’s a slightly sweet, starchy vegetable that resembles the consistency of a pear or apple.  It’s high in dietary fiber and Vitamin C making it a healthy addition to your diet!

Spinach, Goat Cheese and Bacon Frittata

A bag of spinach, a carton of eggs and a package of bacon, what to do, what to do?? It’s sounding like my Italian ancestors version of an omelet is about to happen!

Yes, if you were wondering what exactly a frittata was or what the difference between a frittata and quiche were, you are not alone!  So in the simplest terms: a quiche has a crust (usually) and more liquid than egg, where as a frittata has more egg than liquid and no crust, there it is!

So whether you just learned your fun fact of the day or not, you’re about to dive into a delicious recipe for this Italian crust-less egg dish!

Prep Time: 10 minutes
Cook Time: 10 minutes

Ingredients (serves 4)

  • 6 slices bacon
  • 8 eggs
  • 1/4 cup milk
  • 1 tsp kosher salt
  • 1 tsp pepper
  • 1 tsp olive oil
  • 1/2 onion
  • 1/2 red pepper
  • 3 cups spinach
  • 2 oz goat cheese
  • 1 avocado

Start by frying up the bacon.

Don’t mind those extra couple slices of bacon.  Those are for…. someone 😉 Fry until crispy then drain the grease, crumble and mix together with the eggs, milk, salt and pepper.

Next, heat the olive oil in a sauté pan and add the onion and red bell pepper.

Sauté for 2-3 minutes then add spinach and sauté for an additional 3 minutes.

I know that looks like a LOT of spinach, but I promise it will cook down!

Next, add in the egg and bacon mixture.

Let cook for 2 minutes then crumble the goat cheese on top.

These chunks of goat cheese add an amazing creamy surprise in the middle of the Frittata! Now cook on the stove for 5 minutes, then move into the oven to finish cooking at 400°F for 10 more minutes.  Remove from the oven and voila!

I sliced the Frittata into pieces, topped with avocado and served with homemade rosemary focaccia bread!

Ingredients
