Classic Panzanella Salad with Basil & Artichokes

Fresh basil & artichoke hearts are added to this traditional Italian panzanella salad, consisting of toasted bread & juicy tomatoes! This salad is easy to make & perfect served as a spring or summer side dish, or a light lunch or dinner.

Toasted bread cubes, cherry tomatoes and parmesan cheese in large oval bowl with spoon in bowl

When it comes to salads, I know that most people immediately think a base of greens with various toppings. Well, the panzanella salad says forget the greens, we’re going straight for the bread and tomatoes!

This classic Tuscan bread salad is popular in the summer when tomatoes are at their peak. A traditional panzanella salad is composed of stale Italian bread and ripe tomatoes. It’s tossed in a dressing of olive oil and vinegar. The juice from the tomatoes, combined with the dressing, softens the stale bread and creates a deliciously fun salad!

I don’t know about you, but I’m always down to add a little crispy deliciousness to my salads! This Crispy Eggplant Caprese Salad gets regular requests from friends when I host dinner parties. And this Crispy Goat Cheese Salad is always in the rotation at our house!

The best part about a panzanella salad is that it’s so easy to make! If you don’t already have stale or toasted bread, toast that up first, then simply toss everything together in a bowl.

I added fresh basil, sliced red onion and artichoke hearts to my version of the panzanella salad. All of these fresh ingredients combined with crunchy pieces of bread creates one seriously delicious salad!

Strawberry bruschetta topped with balsamic glaze on white plate

To say I’m a huge fan of bruschetta would be a total understatement. Traditional bruschetta is an Italian appetizer that consists of grilled bread, rubbed with garlic and topped with olive oil and salt. Most commonly in America, it’s also topped with diced tomatoes.

This fresh Tomato Basil Bruschetta recipe has been a hit on the blog for years. It’s been so popular, that I’ve taken the topping and served it over chicken in these Bruschetta Chicken Zoodle Bowls. I’ve also added it to Baked Brie, Salmon and Chicken Parmesan.

I’ve also taken the base of bruschetta, grilled bread with toppings, and put my own spins on it. From Avocado Bruschetta, to Greek Bruschetta, to this delicious Strawberry Bruschetta. The bruschetta toppings really are endless!

This Strawberry Goat Cheese Bruschetta recipe is totally versatile and super easy to make. It can be served as part of brunch, an appetizer or dessert. It can easily be made for parties in just 10 minutes.

Caprese Grilled Chicken Sandwich

Chicken breasts are tossed in a basil pesto marinade, then grilled to perfection and topped with grilled tomatoes and fresh mozzarella cheese in this easy, healthy & totally delicious grilled chicken sandwich recipe!

Pair it with a glass of Grilled Strawberry Lemonade and finish the meal with Grilled Berry S’Mores for a seriously scrumptious meal on the grill!

Grilled chicken sandwich with tomatoes and mozzarella cheese on white plate

Chicken is one of my favorite things to toss on the grill! From chicken skewers, like these popular Chipotle Lime Chicken Fajita Skewers, to meatballs, like these Caribbean Jerk Chicken Meatballs. There’s also the option of marinating chicken breasts and tossing them right on the grill, which is what I did in this recipe!

The marinade for this recipe is basil pesto. It’s easy to make my homemade version or just pick up a jar at the store. If you’re buying store-bought, I highly recommend looking in the refrigerator near the deli section of the grocery store.

You can usually find fresh, refrigerated pesto in this section that’s much better than the stuff in jars near the pasta sauce. Some grocery stores even make their own pesto fresh daily!

After tossing the chicken in the pesto, simply grill it up, then top it with grilled tomatoes and fresh mozzarella cheese. Place it on a bun with more pesto and fresh basil leaves and you’ve got a seriously delicious grilled chicken sandwich in just about 30 minutes!

Cheesy Basil Pesto Pasta

Deliciously flavorful basil pesto, ricotta cheese & cream cheese are combined to make a creamy, cheesy sauce. The sauce is tossed with pasta shells in this easy 20 minute pesto pasta recipe!

Cheesy pesto pasta shells in large white bowl with copper forks in the bowl

To say that I’m a big fan of pesto would be the understatement of the century!

I make half a dozen different types of homemade pesto and use them in tons of different recipes! Basil Pesto is delicious on Baked Salmon. And Sun Dried Tomato Pesto is perfect in this One Pot Vegetarian Tortellini dish!

Pesto can be used on everything from sandwiches to pizza to grilled chicken. But its most popular use is tossed with pasta!

Instead of simply tossing pasta with pesto, in this recipe I made a creamy, cheesy pesto sauce. It’s rich, creamy and decadent! It can be served as a side dish with an entree like Italian Meatloaf or Bruschetta Chicken Parmesan.

It can also be served as a main dish. If you want a more complete meal, add a protein like grilled chicken or steak to this delicious Pesto Pasta!

Basil Pesto

Homemade basil pesto is an easy recipe to make with walnuts, fresh basil, garlic, olive oil & parmesan cheese. It’s perfect for adding to pizza, pasta or grilled chicken dishes!

Overhead shot of basil pesto in a small white bowl with a small gold spoon in the bowl

Basil pesto is so easy to make and one of my favorite homemade sauces. When you make it at home, it has such a fresh flavor, as opposed to what you can buy in a jar at the grocery store.

My first time making pesto was in a home economics class in high school. Did I just totally date myself because home ec is no longer a thing? No surprise here, but home ec was my favorite class.

I learned how to sew, not well, but I tried! And I learned how to cook new things, at a much higher success rate than my sewing!

When pesto was introduced to me in home ec, I’d never eaten pesto before, but I quickly fell in love! Now I make many different versions of pesto.

The fun thing about pesto is that you can easily make it your own based on what greens you have in your fridge or what dish you want to pair it with.

You can also mix up what kind of nuts you use! While pine nuts are the traditional nut used in basil pesto, I used walnuts instead. They’re much less expensive and still work wonderfully in this pesto recipe!

Basil pesto can be added to pizza, tossed with pasta or used as a marinade for chicken or a sauce to top fish. It’s super versatile and so delicious!

Lemon Butter Garlic Shrimp Scampi

Lemon butter garlic shrimp scampi is easy to make in only 15 minutes! Serve this delicious recipe over pasta, or with zoodles for a healthy, keto meal!

Shrimp scampi on top of bucatini pasta on white plate

Shrimp is one of my favorite proteins to make easy weeknight dinners. It cooks up so quickly. It’s easy to make a recipe in 29 minutes or less!

Buffalo Shrimp Tacos are made in just 15 minutes and a favorite on Taco Tuesday. Chimichurri Shrimp Skewers are a deliciously easy recipe to toss on the grill and only take 29 minutes to make!

One of my favorite shrimp recipes is Chili Lime Garlic Grilled Shrimp. It’s delicious served over rice or in tacos and made in just 26 minutes!

When it comes to Italian style shrimp, classic shrimp scampi is where it’s at! There really is nothing better than warm garlic butter sauce poured over succulent shrimp with a fresh zest of lemon!

Shrimp scampi is traditionally served over a plate of cooked spaghetti or bucatini pasta. (My personal favorite!) But you can also mix things up and serve it over zucchini noodles or spaghetti squash for a low carb meal.

No matter how you serve it, you’re going to fall in love with the lemony, buttery goodness of this dish!

The Best Italian Meatloaf

Italian sausage and ground beef are combined with Italian herbs, parmesan & ricotta cheese  in the best Italian meatloaf ever! This recipe is made in under an hour for an easy meal!

Italian meatloaf sitting on top of a bowl of spaghetti noodles, topped with fresh chopped parsley

I used to think that meatloaf was boring, that is until I started putting my own spins on the classic dish! I mean, who can deny a Buffalo Cheesy Meatloaf? It’s meat, cheese and buffalo sauce, and it’s so delicious!

And there’s 100% chance you’ll fall in love with the Bacon Wrapped Meatloaf. It’s meat wrapped in meat, what’s not to love?

With so many delicious meatloaf recipes to choose from, it’s hard to pick a favorite. Though this Italian Meatloaf definitely ranks up at the top!

Since originally making this recipe 6 years ago, I’ve tweaked it and updated it to create THE BEST Italian Meatloaf ever. Seriously, ask my friends! I make this all the time when I want to impress my guests. As described by one friend, “It’s like the most giant, delicious meatball ever!”

The key to any great recipe for meatloaf or meatballs is a combination of meats. In this recipe I used Italian pork sausage and ground beef. The Italian sausage can be mild or spicy, your choice!

I then add ricotta cheese to the meatloaf to give it an extra creamy texture. I guarantee, this will be the best meatloaf you ever eat and you’ll want to make it again and again!

Red spatula holding a piece of chicken parmesan out of a large blue skillet

Chicken parmesan has always been one of my favorite Italian dishes. And that’s saying a lot, because I love Italian food!  It’s cheesy, saucy and easy to make!

Creating gluten free chicken parmesan is as easy as swapping out traditional breadcrumbs for gluten free breadcrumbs. And serving the dish with gluten free pasta, spaghetti squash or zucchini noodles.

This isn’t the first Italian recipe I’ve made gluten free. These Bruschetta Grilled Chicken Zoodle Bowls are a wonderfully healthy, gluten free Italian recipe. And this Gluten Free Pasta Fagioli Soup is a gluten-free spin on the popular Olive Garden recipe. It’s easy to make in an Instant Pot or slow cooker!

Sun Dried Tomato Pesto

Sun dried tomato pesto in small white bowl with gold spoon in bowl and sun dried tomatoes on the side

I love making my own pesto at home. From Walnut Sage to traditional Basil to Kale Pesto, I’m kind of a pesto fanatic!

Homemade pesto is so much better than store bought and it’s easy to make in just 5 minutes. It’s so incredibly flavorful, I promise after one bite you’ll be hooked on making your own pesto too!

Sun Dried Tomato Pesto has a sweeter taste than pesto made from greens. I love this recipe on a variety of dishes. Try it on a sandwich or panini! Add it to this Portobello Caprese Sandwich for a fun low carb meal.

It’s also great on pizza or pasta. I’ve used it in these recipes for Mini Polenta Pizzas and Vegetarian Pesto Tortellini.

It’s flavorful enough, that you can simply toss it with penne pasta and top it with a little fresh grated parmesan cheese for an easy meal, made in less than 15 minutes!

Hawaiian Pizza with Sriracha Pizza Sauce

Delicious Hawaiian Pizza is easy to make at home! This recipe is topped with a scrumptious homemade Sriracha Pizza Sauce that will instantly become a new family favorite!

Hawaiian pizza sliced into pieces on wire baking rack

Pizza might just be the greatest food ever created. It’s carbs, sauce and cheese, plus a variety of delicious toppings all combined in one dish!

Starting a pizza recipe with a delicious dough and scrumptious sauce is the key to a great pizza. I love experimenting making different pizza sauces. The Three Cheese Jalapeno Ranch sauce that I created for this Jalapeno Sausage Pizza is an all time favorite. But this Sriracha Pizza Sauce is now tied for first!

Growing up, one of my favorite pizza restaurants in Oklahoma was Hideaway Pizza. I would always order their “Maui Magic”, a pizza topped with pineapple chunks, mandarin oranges and Canadian bacon.

This recipe is my adaptation of that delicious pizza! In this version, I added homemade Sriracha pizza sauce and swapped out the Canadian bacon for prosciutto.

The spiciness of the sriracha pizza sauce pairs perfectly with the sweetness of the pineapple and mandarin oranges. If mandarin oranges on a pizza is just too weird for you, they can always be left off. Already have ham at home? Use that in place of the prosciutto.

But for the love of Sriracha, take a little time before preparing the pizza to make this sriracha pizza sauce! The recipe makes enough for 3 pizzas. Save extra sauce in the fridge or freezer to make delicious pizzas over and over!

My other favorite thing about pesto is how easy it is to make. Toss all of the ingredients in a food processor and you’ve got delicious homemade pesto in just 5 minutes!

It is also a good source of five minerals, copper, potassium, iron, manganese, and phosphorus.

On the first banh mi pizza experiment I placed the jalapenos, onions and carrots with the pork on the pizza before baking. I also did a little experimenting with the sauce and about 5 pizza taste-tests later, the perfect banh mi pizza was born!

This three cheese baked ziti recipe was inspired by my favorite pizza at Jimmy and Joe’s Pizzeria in Phoenix. I always order it topped with dollops of ricotta cheese and it adds this amazing layer of creaminess to the pizza.

I’ve recreated that ricotta magic on these Garlic Bread Nachos and now on top of this baked ziti recipe!

Italian seasoned ground turkey and mushrooms fill these delicious eggplant roll ups, baked in a flavorful tomato sauce. This recipe is gluten free, dairy free and Whole30 compliant!

Although I love all of my recipes, this might just be my favorite Whole30 recipe so far (shhh don’t tell the others!)

What can I say, I’m a sucker for Italian food. Even when I was a picky eater growing up, I always loved my Italian food! I know, the blasphemy that a food blogger used to be a picky eater!

Usually pasta and cheese are at the top of my Italian menu but I was determined to make an equally amazing Italian dish without the pasta and cheese that was Whole30 compliant.

This recipe for Pasta Fagioli soup is a delicious, gluten free copycat of the Olive Garden favorite, easily made in a slow cooker or Instant Pot!

Growing up in Oklahoma, we’d drive to “the city” AKA Oklahoma City to go to Olive Garden on special occasions. (Because we fancy like that! 😉 ) My favorite thing was their pasta fagioli soup and breadsticks.

The soup name translates to  “pasta and beans”, which means it’s usually not gluten free. If you switch out traditional pasta for gluten free pasta, then you’ve got a delicious gluten free spin on a classic Italian soup!

Mouth watering garlic knots are filled with cheese and smothered in buffalo sauce in this delicious recipe for cheesy garlic knots, perfect as an appetizer or party snack!

Garlic knots, the delicious creation that twists up pizza dough and smothers it in garlic butter, creating one of the most delicious snacks ever!

When I lived downtown San Diego, I used to frequent a little pizza shop that sold garlic knots in a bag by the half dozen. My friends would order pizza slices, I would order a dozen garlic knots and literally just eat them out of the bag, like the civilized food blogger I am! 😉

Needless to say, I’ve had a long standing love affair with garlic knots and today I made them even better by filling them with cheese and smothering them in buffalo sauce, creating Buffalo Cheesy Garlic Knots, also know as THE MOST DELICIOUS SNACK EVER!

In this delicious recipe, Italian seasoned flank steak is cooked in a cast iron skillet or sous vide, then topped with balsamic roasted cherry tomatoes.

This is one of those recipes that I’ve been planning to make for months, yet never seemed to get around to. Now that I did, I’m kicking myself for waiting so long to make it!

In my world, balsamic roasted cherry tomatoes on anything and everything is a win, ok maybe not pancakes, but maybe if I made savory herb pancakes, I think I’m on to something! Anyway, I digress, basically what I’m saying here is balsamic roasted cherry tomatoes are BAE! Balsamic roasted cherry tomatoes literally burst open with flavor on top of anything from Turkey Polenta Casseroles to Bruschetta to Pesto Salmon!

Bruschetta Chicken Parmesan Recipe

When it comes to comfort food, I think of recipes I grew up with in Oklahoma, biscuits and gravy, mac and cheese and my Dad’s fried chicken. Now that I’m living a healthier lifestyle in California, I’ve had to redefine comfort food.

New comfort food to me is incorporating some of the aspects of the old comfort food favs in new, healthier, yet still totally delicious, ways!

For example, using spaghetti squash instead of pasta in Mac & Cheese, like in this recipe for Cheesy Jalapeno Popper Spaghetti Squash, or going the other direction and using butternut squash to make the sauce in Mac & Cheese creamier with the use of less cheese, like I did in this recipe for Butternut Squash Mac & Cheese.

Pesto Smashed Potato Salad Recipe

Growing up, I was never a fan of potato salad. To be fair, I wasn’t a fan of a lot of foods. Blasphemy, I know! The food blogger that was a picky eater growing up, say it ain’t so, oh, but it is!

A few years after moving to California for college, I started trying new foods and recipes, and realized what I had been missing all of these years! Ahem, guacamole, the green stuff, freaking delicious! Fish, sushi, yes, please! But one thing I can say I’ve never really taken a liking to is potato salad. I’m guessing my aversion to mayonnaise might have a little something to do with that!

So today I’m making a potato salad that’s colorful, flavorful, sans mayonnaise and filled with tons of green goodness!

Tomato bruschetta on top of sliced grilled chicken breast in bowl with zucchini noodles

Bowls in the food world are the equivalent to Game Of Thrones in the TV world, SO HOT RIGHT NOW! If you google “Bowl Trend In Food” you’ll find dozens of articles about how “Bowls Are The New Plates”. Yes, that’s actually the title of an article from The Wall Street Journal!

This is one food trend that I’m not upset about at all! You can pack a lot of healthy ingredients into a bowl, while also adding a ton of flavor to make it super tasty!

A few weeks ago I hopped on the trend with a delicious recipe for Thai Peanut Pineapple Veggie Rice Bowls. Although technically I was ahead of the trend with my Gluten Free Kung Pao Beef & Noodle Bowl that I introduced in 2013!

Today I’m sharing a new chicken recipe that incorporates one of my favorite cooking methods, grilling, into the trendy new bowl phenomenon! Bruschetta plus chicken, equals a match made in heaven! Combine the two on top of fresh, healthy zucchini noodles and you’ve got one winning bowl recipe!

The olive oil, balsamic vinegar and tomato juice from the bruschetta act as a dressing on the zucchini noodles. And the pieces of tomato add a burst of freshness and flavor to every bite!

If you have time in the morning, toss the chicken in the marinade. (Don’t worry, it will take less than 5 minutes!) In the evening, toss the chicken on the grill and mix up the bruschetta. Spiralize some zucchini and scrumptious grilled chicken zoodle bowls await you!
