Cheesy Basil Pesto Pasta

Deliciously flavorful basil pesto, ricotta cheese & cream cheese are combined to make a creamy, cheesy sauce. The sauce is tossed with pasta shells in this easy 20 minute pesto pasta recipe!

Cheesy pesto pasta shells in large white bowl with copper forks in the bowl

To say that I’m a big fan of pesto would be the understatement of the century!

I make half a dozen different types of homemade pesto and use them in tons of different recipes! Basil Pesto is delicious on Baked Salmon. And Sun Dried Tomato Pesto is perfect in this One Pot Vegetarian Tortellini dish!

Pesto can be used on everything from sandwiches to pizza to grilled chicken. But its most popular use is tossed with pasta!

Instead of simply tossing pasta with pesto, in this recipe I made a creamy, cheesy pesto sauce. It’s rich, creamy and decadent! It can be served as a side dish with an entree like Italian Meatloaf or Bruschetta Chicken Parmesan.

It can also be served as a main dish. If you want a more complete meal, add a protein like grilled chicken or steak to this delicious Pesto Pasta!

Basil Pesto

Homemade basil pesto is an easy recipe to make with walnuts, fresh basil, garlic, olive oil & parmesan cheese. It’s perfect for adding to pizza, pasta or grilled chicken dishes!

Basil pesto is so easy to make and one of my favorite homemade sauces. When you make it at home, it has such a fresh flavor, as opposed to what you can buy in a jar at the grocery store.

My first time making pesto was in a home economics class in high school. Did I just totally date myself because home ec is no longer a thing? No surprise here, but home ec was my favorite class.

I learned how to sew, not well, but I tried! And I learned how to cook new things, at a much higher success rate than my sewing!

When pesto was introduced to me in home ec, I’d never eaten pesto before, but I quickly fell in love! Now I make many different versions of pesto.

The fun thing about pesto is that you can easily make it your own based on what greens you have in your fridge or what dish you want to pair it with.

You can also mix up what kind of nuts you use! While pine nuts are the traditional nut used in basil pesto, I used walnuts instead. They’re much less expensive and still work wonderfully in this pesto recipe!

Basil pesto can be added to pizza, tossed with pasta or used as a marinade for chicken or a sauce to top fish. It’s super versatile and so delicious!

Grilled pesto chicken, fresh avocado & cherry tomatoes top this healthy, easy, gluten free salad recipe. It’s delicious as an entree or side dish and it’s perfect for meal prep!

Sliced pesto chicken, sliced avocado and diced cherry tomatoes on top of spinach salad in bowl

Today’s post is sponsored by my friends at California Avocados!

I love topping a delicious bowl of greens with flavorful grilled chicken. And obviously, I’m not the only one! These Bruschetta Grilled Chicken Zoodle Bowls are the most popular gluten free recipe on the blog.

When it comes to my favorite topping for any salad, bowl or basically any meal, it has to be avocados! Creamy, flavorful California Avocados are a staple in my pantry and a huge part of my diet. I love that you can add them to everything from smoothies to enchiladas.

This Lean & Green Superfood Smoothie is my go-to in the mornings! And I could eat these Creamy Avocado Corn Enchiladas every week!

For this salad, I added a whole sliced California avocado with quartered cherry tomatoes and grilled pesto chicken. I used homemade Basil Pesto for the pesto chicken, but store-bought works also!

This salad is bursting with flavor! It can be served with the chicken hot or cold, as an entree or side dish. You can easily toss the salad together while meal prepping and divide it up for lunches throughout the week.

No boring salads here! This salad will become your new favorite. And the great thing is, it’s quick and easy to make in just 29 minutes!

I love making my own pesto at home. From Walnut Sage to traditional Basil to Kale Pesto, I’m kind of a pesto fanatic!

Homemade pesto is so much better than store bought and it’s easy to make in just 5 minutes. It’s so incredibly flavorful, I promise after one bite you’ll be hooked on making your own pesto too!

Sun Dried Tomato Pesto has a sweeter taste than pesto made from greens. I love this recipe on a variety of dishes. Try it on a sandwich or panini! Add it to this Portobello Caprese Sandwich for a fun low carb meal.

It’s also great on pizza or pasta. I’ve used it in these recipes for Mini Polenta Pizzas and Vegetarian Pesto Tortellini.

It’s flavorful enough, that you can simply toss it with penne pasta and top it with a little fresh grated parmesan cheese for an easy meal, made in less than 15 minutes!

I love tossing pesto with tortellini, stuffing it in chicken and adding it to potato salad.

The best part about pesto is how you can make an easy, flavorful meal with it in less than 30 minutes. I combined kale pesto with pasta, sun dried tomatoes and goat cheese to make this easy pesto spaghetti recipe in just 15 minutes!

I’ve made this recipe with both traditional spaghetti and corn spaghetti, to make the recipe gluten free. Both versions work great!

Pesto tortellini with sun dried tomatoes and fresh basil in bowl with spoon

Let me tell you about my love of one pot meals. It’s a great love, a love that can only come from the fact that I absolutely hate doing dishes! One pot meals allow me to wash just one dish at the end of preparing the meal. Yes, please!

I love one pot rice dishes, like this Taco Chicken and Rice and this Kimchi Fried Rice.

I also love one pot potato recipes, like this One Pot German Meatballs and Potatoes and this One Pot Meatloaf Hash.

But let’s be honest, one pot pasta dishes are always a fan favorite! This One Pot Greek Pasta is a huge hit on the blog. It’s so flavorful, you’ll want to make it every week! And this One Pot Cajun Pasta is always a fun way to spice up a weeknight dinner!

Now when it comes to finding the perfect vegetarian one pot meal, this Vegetarian Tortellini recipe is where it’s at! Creamy cheeses, combined with sun dried tomato pesto make an amazing sauce to toss with the cheesy tortellini and fresh veggies.

This vegetarian tortellini is one of my favorite recipes of all time and I keep it in regular rotation on Meatless Mondays! It’s an easy dinner to make and clean up!

  3. Spinach Pesto
  4. Vegan Pesto

Toss it in risotto or spread it on baked salmon. The options really are endless!

My other favorite thing about pesto is how easy it is to make. Toss all of the ingredients in a food processor and you’ve got delicious homemade pesto in just 5 minutes!

This kale pesto is not only easy, delicious and versatile, it’s also packed with health benefits!

Pesto Smashed Potato Salad

Boiled, then baked garlic, parsley smashed potatoes are tossed in basil pesto with arugula & green onions for a delicious twist on traditional potato salad!

Pesto Smashed Potato Salad Recipe

Growing up, I was never a fan of potato salad. To be fair, I wasn’t a fan of a lot of foods. Blasphemy, I know! The food blogger that was a picky eater growing up, say it ain’t so, oh, but it is!

A few years after moving to California for college, I started trying new foods and recipes, and realized what I had been missing all of these years! Ahem, guacamole, the green stuff, freaking delicious! Fish, sushi, yes, please! But one thing I can say I’ve never really taken a liking to is potato salad. I’m guessing my aversion to mayonnaise might have a little something to do with that!

So today I’m making a potato salad that’s colorful, flavorful, sans mayonnaise and filled with tons of green goodness!
