Instant Pot Mushroom Risotto

Risotto is one of my favorite Italian dishes. It’s rich, creamy and so delicious!

I can’t wait to make this Butternut Squash Risotto every fall! And I love serving this Cilantro Lime Pesto Risotto with Mexican food.

The one thing about risotto that I don’t like is the hands-on time it takes to make risotto. It’s not hard to make. You just have to hang out by the stove for 30-45 minutes ladling broth into the risotto. That’s what makes risotto so creamy!

I thought there was no way that Instant Pot Risotto was going to create the same creamy texture as traditional risotto. But it does!

I took me a few attempts to get the perfect rice to broth ratio down. But in the end, I created the most creamy, dreamy Instant Pot Risotto!

No more standing around the stove to get the perfect creamy risotto. Just spend 10 minutes sautéing ingredients in the Instant Pot, then pop the lid on. Pour yourself a glass of wine and relax while the Instant Pot does the work for you!

We’ve now been eating Instant Pot beef or chicken stroganoff every week since. It’s so good, easy to make and the entire meal is made in the Instant Pot, making clean-up a breeze!

Stroganoff, whether beef or chicken, really is the ultimate comfort food. A creamy sauce, that I could eat with a spoon like it was soup, combined with noodles, meat and mushrooms. It’s a winning combination every time!

If there’s one thing you’ll never find a lack of on this blog it’s tacos! They’re one of my favorite foods and I love to find various cooking methods and ingredients to make tacos.

I use the slow cooker to make Beef Barbacoa Tacos and Chipotle Honey Pulled Pork Tacos.

I use the grill to make Carne Asada Tacos and Grilled Veggie Chimichurri Tacos.

Now I’m busting out my Instant Pot to make Pressure Cooker Chicken Tacos!

These tacos are seriously easy to make and you can serve them a variety of different ways. Keep it traditional and serve them in corn or flour tortillas or crispy taco shells. Serve the chicken over rice for taco bowls or lettuce for taco salads. For a whole30 and low carb option, serve the chicken in lettuce wraps with sliced avocado.

No matter how you serve them, you’re going to love the simplicity and deliciousness of these pressure cooker chicken tacos!
