If there’s one thing you’ll never find a lack of on this blog it’s tacos! They’re one of my favorite foods and I love to find various cooking methods and ingredients to make tacos.

These tacos are seriously easy to make and you can serve them a variety of different ways. Keep it traditional and serve them in corn or flour tortillas or crispy taco shells. Serve the chicken over rice for taco bowls or lettuce for taco salads. For a whole30 and low carb option, serve the chicken in lettuce wraps with sliced avocado.

Buffalo Chicken Egg Rolls

Pan fried Buffalo Chicken Egg Rolls are the ultimate Super Bowl snack! They’re easy to make in less than 30 minutes and perfect for parties!

Buffalo chicken egg rolls piled up on a green plate with one egg roll cut in half on top, with cheddar cheese and a cheese grater in the background

Today’s post is sponsored by my friends at Cabot!

The big game is right around the corner and you know what that means! I’m pulling out all of the stops to make the ultimate buffalo cheesy menu for game day!

My friends at Cabot Cheese have helped me make recipes deliciously cheesy for several years now! From their shredded Fiery Jack cheese on top of this Cheesy Baked Taco Dip to their Garlic Herb Cheddar in this popular Cheesy Mushroom Spinach Puff Pastry recipe, their naturally aged cheddar cheeses are always a hit in recipes!

Cabot is a co-operative owned by 1,000 farm families throughout New England & New York. That means 100% of their profits go back to the farmers! This year Cabot is celebrating their 100th year as a co-operative.

Back in 2015, I flew back east and visited a Cabot farm. I got to meet the cows and ran a race as part of the “Cabot Fit Team”. You can read all about it in this post for Chipotle Maple Chicken SlidersAnd check out pictures of the totally cute baby cows!

In this recipe for Buffalo Chicken Egg Rolls, I use Cabot’s Vermont Sharp Cheddar cheese. It is the perfect complement to the buffalo chicken.

These egg rolls really are the perfect appetizer, crispy on the outside, saucy & cheesy on the inside!

Thai Coconut Potsticker Soup

Thai coconut soup is deliciously flavorful & easy to make in just 29 minutes! In this recipe, I added chicken potstickers for a fun twist on classic Tom Kha soup!

Thai coconut soup with potstickers in bowl, garnished with fresh lime wedge, green onions and cilantro, with copper spoon in bowl and fresh cilantro behind bowl

I’m all about combining two things I love into one dish!

Thai peanut sauce and roasted sweet potatoes, tomato basil bruschetta and grilled chicken, and now Thai coconut soup and potstickers!

Whenever we go out for dinner, there’s an 8 out of 10 chance I’m going to try to convince Kurt to go to Koon Thai. It’s my favorite Thai restaurant and one of my overall favorite restaurants in San Diego!

They make the most delicious pan fried roti bread, curries and noodle dishes, as well as the best Tom Kha soup I’ve ever had!

After our last visit, I decided it was time to try making my own Tom Kha soup at home!

What is Tom Kha Soup?

Tom Kha soup is a Thai coconut soup made with coconut milk, lemongrass, Thai chili peppers, cilantro, mushrooms, fish sauce and lime juice. While it’s typically made with chicken, you can also find versions with shrimp, pork or tofu.

What is the difference between Tom Kha and Tom Yum Soup?

Tom Yum Soup is made with a base of boiled meat, such as shrimp or pork, water and herbs. It is sour and spicy in flavor. Tom Kha Soup is made with a coconut milk base and is more sweet and spicy in flavor, than sour.

Ground beef tacos in crispy shells with shredded lettuce and french onion dip on plate with bowl of french onion dip

In our house, French Onion Dip and chips are always a requirement on the menu for NFL Sundays!  So like any good food blogger, I made my own French Onion Dip Mix and started making homemade dip every Sunday.

Since I now had this delicious French Onion Dip Mix sitting in the pantry, I decided to try it out on other recipes, instead of just dip!

I first tried it out on pot roast and the result was AMAZING! Seriously, French Onion Pot Roast is the best pot roast ever! It was so good, I made it both in a pressure cooker and in a slow cooker.

Next up, I made these French Onion Dip Tacos. The perfect game day food that combines easy ground beef tacos with a seriously delicious dip!

We ate them on game day in crispy shells, then I made them again for dinner during the week and served them on flour tortillas. Both totally tasty options for this seriously easy taco recipe!

Mini Tacos with Avocado Cream Sauce

Mini Baja Tacos at Bailiwick San Diego

It’s Taco Tuesday and only two days away from Little Leopard Book’s 2nd Birthday Party where these delicious Mini Tacos will be served!

Fernanda Peimbert, the chef at Bailiwick where the party will be hosted, asked what kind of hors d’oeuvres I’d like served at the event.  I told her light, fresh and gluten free!

This is the first of four recipes she created for the party that I’ll be sharing with all of you!

Mini Baja Tacos at Bailiwick San Diego

I shot the images above during a tasting last week at Bailwick, then I came home and re-created the dish for my upcoming web series, Cooking Secrets of a Single Girl, and to share here on Little Leopard Book.

Check out the video here on how to make these delicious mini tacos:

While Fernanda used pickled red onions, I used raw red onions and pickled jalapeños instead. To be completely honest, I liked her pickled red onions better than my raw red onions, but I did like the addition of pickled jalapeños on mine!  For those of you making the dish at home, you can try either the raw or pickled red onions and decide for yourself which you like best!

Mini Beef and Bacon Taco Ingredients

Ingredients

  • 1 lb ground beef
  • 1/2 cup chopped bacon (approximately 4 slices)
  • 1 avocado
  • 1 lemon (juiced)
  • 1/4 cup fresh parsley (divided)
  • 1/2 tsp cumin
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 2 cups round corn tortilla chips
  • 1/4 cup diced red onion (raw or pickled)
  • 1/4 cup pickled jalapeños (diced)

Begin by adding the bacon to a large skillet over medium-high heat.  Depending how crispy you want the bacon cook for 2-5 minutes, then add the ground beef.

Beef and Bacon Taco Meat

While the meat is cooking prepare the avocado cream sauce by adding the avocado, lemon juice, cumin, salt, pepper and 1 tbsp parsley to a blender or food processor and puree.

Once the meat is cooked, drain the grease and get ready to prepare the mini tacos!

How to make mini tacos

Place the ground beef bacon mixture onto the corn tortilla chips then top with the chopped red onion, jalapeño, avocado cream sauce and a sprig of fresh parsley.

Tomato Basil Bruschetta Baskets

Nutella Cheesecake Bites

Nutella Cheesecake Bites

The inspiration for this dessert came last week while studying for finals. I was rummaging through my cabinets looking for a sweet snack and stumbled upon the vanilla wafers I had purchased to dip in my Birthday Cake Hummus. Then I spied that little jar of hazelnut goodness sitting on the shelf above. My vanilla wafers all the sudden started screaming, “dip me in hazelnut goodness, dip me in hazelnut goodness”, and since talking cookies freak me out, I obeyed.

Pretty much the greatest combination ever.

Now I thought, I could just spread some nutella on vanilla wafers and serve them at my Christmas Cocktail Party, but that just wasn’t quite inventive enough for the little leopard book, so I whipped some cream cheese into the nutella and replaced a graham cracker crust with vanilla wafers to make mini-nutella cheesecake bites!

Mini Nutella Cheesecakes

As I prepared these little bite-sized desserts for my party, I had to make a separate plate for my roommate and I to snack on so that we didn’t eat all of the bites reserved for the guests before the party!

Tiramisu Tart

Tiramisu, Tart, Ginger Snap Crust, Chocolate Shavings, cocoa powder, torani, coffee syrup, ricotta, mascarpone, cheese, recipe, dessert

This recipe was inspired by my original plan to make a layered Tiramisu dip for my Housewarming Party.  That never happened. I’ve learned after throwing dozens upon dozens of parties that sometimes I just have to throw in the towel on a couple planned menu items. Sometimes it all comes together and sometimes it doesn’t.

I always start with the party “must haves” and then leave the rest up to fate. As fate would have it, the Tiramisu dip was not made, but two days later this delicious Tiramisu Tart came into my life!

Tiramisu, Tart, Ginger Snap Crust, Chocolate Shavings, cocoa powder, torani, coffee syrup, ricotta, mascarpone, cheese, recipe, dessert

I knew I had to use the Mascarpone and Ricotta Cheese before they went bad but I scratched my original dip recipe. I felt like a dip was more party dessert then “have a slice after work/school” kind of dessert. I decided on a Tart simply because I had an unused Longaberger tart dish sitting on a shelf begging to be used!  I had originally planned to use Ginger Snap cookies for dipping, so I simply ground them up in my food processor and made them into the crust, then filled it with the dip. This made for a great evening treat all week!

Tiramisu, Tart, Ginger Snap Crust, Chocolate Shavings, cocoa powder, torani, coffee syrup, ricotta, mascarpone, cheese, recipe, dessert

Ingredients

  • 1 1/2 cups ginger snap crumbs
  • 4 tbsp butter (melted)
  • 1/4 cup sugar
  • 1 cup mascarpone cheese
  • 1 cup ricotta cheese
  • 1/2 cup sour cream
  • 1/2 cup brown sugar
  • 1/4 cup coffee syrup
  • 2 tbsp marsala wine
  • 1 tsbp cocoa powder
  • 2 tbsp chocolate shavings

Start making the crust by combining the ginger snap crumbs, butter and sugar in a small mixing bowl. Next, press the mixture into a tart pan.
