Homemade restaurant style Mexican Rice is quick and easy to make at home! This simple recipe is healthy, vegetarian and gluten free!

I originally created this Mexican Rice recipe for my Mom. She requested it to go with Chipotle Lime Chicken Fajita Skewers and Deconstructed Mexican Street Corn. Those are her two favorite recipes on the blog!

If you don’t know my Mom yet, allow me to introduce you. Her name is Muffet, yes like the one that sat on the tuffet! She’s always been a huge supporter of the blog.

She traveled with me on my cookbook tour. She flies from Oklahoma to San Diego to assist me on big shoot days. And most recently she took over my e-mail newsletter.

Instant Pot Mushroom Risotto

Risotto is one of my favorite Italian dishes. It’s rich, creamy and so delicious!

I can’t wait to make this Butternut Squash Risotto every fall! And I love serving this Cilantro Lime Pesto Risotto with Mexican food.

The one thing about risotto that I don’t like is the hands-on time it takes to make risotto. It’s not hard to make. You just have to hang out by the stove for 30-45 minutes ladling broth into the risotto. That’s what makes risotto so creamy!

I thought there was no way that Instant Pot Risotto was going to create the same creamy texture as traditional risotto. But it does!

I took me a few attempts to get the perfect rice to broth ratio down. But in the end, I created the most creamy, dreamy Instant Pot Risotto!

No more standing around the stove to get the perfect creamy risotto. Just spend 10 minutes sautéing ingredients in the Instant Pot, then pop the lid on. Pour yourself a glass of wine and relax while the Instant Pot does the work for you!

Man, oh man, the last month has been absolutely insane! I started the moving process at the beginning of August and after 3 weeks I was totally moved-in. I’m now officially living in my new little beach house with the worlds best boyfriend! (I might be slightly biased! 😉 )

Of course, two days later was the boyfriends birthday, so that entire weekend was spent at Dave Matthews Band Concerts, steak dinners, country bars and beach picnics!

Two days after that, I was cooking and Snapchatting live from the Cox Smart Home event. It was a super cool event showing how to use their Gigablast High Speed Internet throughout your home using smart appliances.

I was, of course, using their internet to post live from the event. I was also feeding the attendees delicious Nutella Chocolate Chip Cookies, Bacon Wrapped Dates, Fig & Brie Puff Pastry Bites and Antipasto Skewers.

Once I wrapped that event up, two days later I was hanging out on San Diego 6 News sharing my favorite recipes for game day!

Then it was Labor Day weekend and college football of course!

So now, finally this week, I’m back in the kitchen cooking up new recipes in my new kitchen! This new kitchen also happens to be the worlds smallest kitchen!  (Y’all pray for me for the next 6 months while I cook in this teeny tiny kitchen while we look for a house to buy!)

The moral of this story is, my parents are not normal parents, they’re cool parents! (Mean Girls reference, anyone?!)
