Garlic balsamic marinated sirloin is cooked in just 30 minutes in this Instant Pot Beef recipe, then topped with fresh tomato basil bruschetta for a delicious meal!
Add the sirloin to a large plastic bag with 2 tbsp olive oil, balsamic vinegar, sea salt, black pepper, garlic and basil and marinate for up to 8 hours, I would recommend at least an hour.
Press the saute button on the Instant Pot, use the adjust button to set on the “normal” setting.
Add 1 tbsp olive oil to the Instant Pot, when the display says “hot”, add the sirloin and sear for 1-2 minutes per side.
Press the Keep Warm/Cancel button on the Instant Pot.
Place the lid on the Instant Pot and make sure the steam release is set to “sealing”. Press the “manual” button and set the Instant Pot to high pressure, then use the +/- buttons to set the Instant Pot to 10 minutes.
When the cooking time is up, turn off the Instant Pot and wait 5-10 minutes, then release any remaining pressure before unlocking the lid.
Remove the sirloin from the instant pot and let rest 5-10 minutes before slicing.
Tomato Basil Bruschetta
While the sirloin is in the Instant Pot, combine all of the bruschetta ingredients in a medium mixing bowl.
Spoon the bruschetta over the sliced sirloin and serve.
