Ingredients
½cupfresh mint
4limes, sliced
½cupsugar
½cuppomegranate seeds, divided
32ozcoconut water
2cupswhite rum
3cupsPomegranate Italian Soda
For Garnish
mint sprigs
lime wedges
Instructions
Add the fresh mint, sliced limes and sugar to the bottom of a pitcher or punch bowl.
Muddle with the back of a large spoon or a muddler until the sugar has dissolved into the lime juice.
Add ¼ cup pomegranate seeds.
Muddle the pomegranate seeds, then add the coconut water, rum, and pomegranate Italian soda.
Stir all of the ingredients together.
Fill the pitcher with ice then pour to serve immediately, or place in the refrigerator without ice until ready to serve.
Before serving, garnish the pitcher or punch bowl with sliced limes, fresh mint and the remaining ¼ cup pomegranate seeds.
Serve in glasses garnished with mint sprigs and lime wedges.
