mojito sugar

coconut milk

dried cranberries

Instructions
Preheat the oven to 350°F.
In a small bowl combine the flour, baking powder and salt.
Add the butter, granulated sugar and mojito sugar to a large bowl.
Using an electric hand mixer, combine the butter and sugars.
Add the coconut milk and egg, combine well.
Add the flour mixture.
Once the batter is well mixed, hand mix in the cranberries and lime zest.
Spoon the batter into lined muffin tins.
Bake for 25-30 minutes.
